Top Chef Duels 8/20, spoilers, Antonia vs Mike - a profane and foggy recap

Probably something like:

"Grr, I'm better than you!"

"No, I'm better than you!!"

"I will diabolically f*ck you up with a challenge in an area where you're historically weak!"

"You're f*cked! I won your challenge, even though I'm historically weak in this area!"

At least it will go like that, based on the past three epidoes ...

Ha! I watched in the same state of altered consciousness as Cowboyardee, and also missed Wolfgang entirely (granted, that was one crowded table ...)!

I think, with a pre-pre-challenge, a pre-challenge and a challenge, it's just too busy. Maybe with a single pre-challenge, it might flow better?

Not looking forward to next week so much. Never cared for CJ, and his cooking doesn't seems particularly inspired. Never cared for Mike I. that much, either, but at least his food looks/sounds good.

Bacon

You'd be surprised. I had tried chocolate-covered bacon and didn't much see the point in it until I had a thick, chewy slice covered in a high-quality dark chocolate.

Then I understood.

Top Chef Duels

The things you liked, I liked. But, if this show is more than a one-off, I predict, as with Top Chef Masters, they'll ramp up the "interpersonal drama," since it's perceived that viewers find "more focus on the food" boring. Which is too bad.

Also agree on Curtis Stone. Seems nice enough, but is pretty bland.

NOW OPEN: Matcha Love by Ito En inside Mitsuwa Market, San Jose (Matcha ice cream/Black Sesame ice cream, etc)

I just read about this yesterday. Love tea ice creams, and nice to see they have hoji-cha. Can't wait to try it next time I'm down that way. There's a Japanese Gourmet Fair later this month, where they'll have takoyaki and fish cake, so that will be a good excuse to make the trip!

Gifts from California

TJ gifts are hugely popular in Hawaii. The cookie butter is a good place to start!

Best foie gras dishes on O'ahu

The Soup and Sandwich, which I've had as part of the tasting menu, is a super tasty combination of different textures (in the picture below, you can't see the lovely yin and yang design of the soup). But, because I am also from California, I couldn't resist ordering an additional appetizer of foie gras with a li hing mui chutney. The richness of the foie with the salty/sweet fruitiness of the li hing was a perfect match.

ono seafood closed for renovation / times has fresh poke

I hope they add more seating. When I was there in September, the lone table was flled by a single group, so I took my poke and ate it at an abandoned picnic table at the side of Kapahulu (I think it was leftover from a food truck pod that used to be there). I probably looked a little strange, but the poke was so good, I didn't care!

Top Chef NOLA - Ep. #17/Finale Part 2 - 02/05/14 (Spoilers)

Yeah, there were so many scenes of Nick complaining about how things were going, or claiming that he would lose, that I figured he would be the winner.

Top Chef NOLA - Ep. #17/Finale Part 2 - 02/05/14 (Spoilers)

Shirley, Carlos, Louis, Brian and Stephanie were no-brainers, because, aside from Nina and Nick, they survived the longest. I figured they brought back Jason and Travis to see if they would pick their friends over others who may be more skilled. Don't know why they chose Janine or Sara (although I have a feeling Janine, given her camera time in LCK, may have made an impression on someone ...). Maybe it depended on who was able/willing to make the trip?

Top Chef NOLA - Ep. #17/Finale Part 2 - 02/05/14 (Spoilers)

I prefer seasons where I'm happy with whoever wins. This was not one of those seasons. Aside from the fact he was a pill, I never found Nick that inspiring. Oh well, next season ...

Wow, Tom was kind of damning Nick with faint praise during his phone-in on "Watch What Happens Live."

Yeah, it's when you get it crispy that it's really good, which is why I was a little wary of Louis' torchon;, but apparently, the judges thought they were okay.

Top Chef NOLA - Ep. #15 - 01/22/14 (Spoilers)

I remember Nicholas telling the wait staff to be sure to pour the broth from the side of the dish, not over the top. Depending on how much broth was poured in, some of the fish (at least the top portions) wouldn't have had any broth on them. Unless you made it a point to mop each portion of fish throughly through the broth, you'd have bites of just plain fish. If the seasoning of the fish was that dependant on the broth, better to pour it over the top (though it probably wouldn't look as nice).

When Carlos said he would do a tamale, my heart kind of sunk, because I figured he would be playing right into the "he only cooks Mexican!" complaint. But once he described it, I was very impressed and thought he was undertaking the challenge in a very personal and creative way.

I'd really like to try that seafood tamale.

Last Chance Kitchen 1/22/2014 spoilers

Maybe they filmed both Carlos and Louis standing behind palm fronds for preview editing hijinks!

I also noticed Nicholas's face in the preview, but figured he could easily be responding to something entirely different than the reveal of the returnee ...

Top Chef NOLA - Ep. #14 - 01/15/14 (Spoilers)

I like Carlos, and agree that some of his dishes he has made are very impressive. I was looking at the website for his restaurant, and turns out he trained under a French chef. I guess he just chooses to highlight a "lesser" ethnic cuisine ...

Top Chef NOLA - Ep. #14 - 01/15/14 (Spoilers)

I guess it might have cut the gooeyness complained of by the Cafe Reconcile staff? But, the carrot/tuna combo, either with or without quinoa, just sounded odd to me. Seemed to me he might have been better off using a milder protein to highlight the carrot, like maybe boneless, skinless chicken breast? (*ducking*)

When I turned the channel to watch this episode, I caught the tail end of the previews for next week. I saw Nick and Carlos, and knew neither of them would be eliminated. Then Shirley won immunity, so I figured it was down to Nina or Brian. By the time they got to the bottom two -- Nick and Brian -- Nick's dish sounded so much worse, I thought maybe no one would be eliminated. I was as surprised as Nick that it wasn't him.

Top Chef NOLA - Ep. #13 - 01/08/14 (Spoilers)

I haven't been to Atelier Crenn yet (but it's way up on my list, believe me!), but I have been to similiar restaurants, and I agree with mariacarmen on this. What may look or sound strange, in the hands of a visionary chef, can indeed be a fantastic experience.

I did, however, have a chance to try one of Chef Crenn's dishes at a brunch event at a food festival. She made a hot cereal dish with various nuts and grains, topped with a chocolate "vine." A very adult porridge that both Ferran Adria and Euell Gibbons might have been proud to call their own! I think it's a variation of a dish she serves in her restaurant, that's usually more Tom than Emeril (i.e., savory).

Top Chef NOLA - Ep. #13 - 01/08/14 (Spoilers)

I didn't see the threat as implicit, either. And Pepin may have been the one to verbalize the idea that Nick should fall on his sword, but I get the feeling that it must have been talked about a lot by all the judges, who considered it a possibility.

On last night's Watch What Happens Live, Andy Cohen said he had talked to Tom Colicchio that evening about this episode, and said Tom reiterated that immunity was part of the game, and that Nick was well within the rules to hang on to his immunity.

Within the confines of the editing (since we never *really* know the whole truth ...), Nick's story about when he wasn't asked to stay on as EC at his old restaurant when the rest of the staff was, and that he had basically been stewing over it for a year, explained a lot about his personality on the show.

Chocolate Covered Macadamia Nuts

I like Hawaiian Host dark chocolate covered whole macadamias.
