Help needed with clumping seasoning

As long as there's no foil label or anything foil on the container, you can nuke them for a few seconds at a time to soften. I keep onion & garlic powders, seasoned salts etc. in the fridge, helps to keep them dry and "shakeable"

Celery half-portions for small households.

The foil wrapping is all you need and the celery will last a lot longer than a couple of weeks. That's all you need to do, no trimming, no damp paper towels, vases etc.

Venison Burgers/Sliders

I picked up some suet at the store, thought I would freeze it then grate it so I can mix it into the already ground venison. Does this sound like it would work? Any better ideas?

Venison Burgers/Sliders

I was given some ground venison, and I know it's VERY lean, but I've never cooked with it before. My husband suggested sliders or burgers. I'm thinking sliders would be a good idea, as I can cook them quickly without drying them out. Don't I still need to add some sort of fat? If so, what kind, and how? I don't have a meat grinder, but I do have a food processor. Any advice and recipes would be appreciated. TIA

Cleaning cabinets above stove

Try Simple Green, undiluted. Any product that has water in it will make it really hard to remove grease. If you try Murphy's, don't dilute it either.

Ancient Chinese Secret? Chicken Broth

Do you know of a brand of soup base to use when making a chinese chicken stock? I love the ultra-flavorful broth from chinese restaurants, and have not been able to duplicate it. I get sort of close, but it's not as rich as I want. I have access to a store with a huge amount of asian products, not just Chinese. Thanks!

ductless hood (VENT A HOOD?)

I use the fan in my 1/2 bath that is very near to the kitchen, and open a window for good ventilation. Probably doesn't cut down on grease, but it definitely helps keep the smoke detectors from going off when using the broiler.

Keeping the Kitchen Cabinets clean - What's your secret sauce ?

I use Simple Green undiluted, just spray it on the cabinets & wipe with a cloth. It takes all the grease off. Any solution that has water in it is just going to make you work harder. I don't even rinse it, but if you want to, just wipe with a damp cloth. I am more impressed with this stuff every time I use it. I sprayed it on the burner pans from my electric stove & let them sit a little while. When I washed them, they were like new, & they are probably 4 years old. I was going to replace them, but now I don't need to.

Foods from your childhood that seem laughable now

If any of you live within striking distance of Cincinnati, you can find lots of nostalgia items at Jungle Jims in Fairfield, OH. However, I have yet to be thrilled with anything I bought, especially in the candy dept. It all tastes so artificial. And be careful of what you buy from Vermont Country Store, they sell Pear's soap, 3 bars for $14.95 + shipping. Dollar Tree sells it also, for, you guessed it, $1.00 a bar.

It irritates me to no end, I find it to be rude, and I think the managers should be told to tell their wait staff that it's inappropriate, That being said, a lot of the managers are young and think nothing of it. However, if I plan on staying, regardless, I say nothing because the last thing you want to do is piss off the person who handles your food - and I DON"T want to hear from people who "swear" that their workers are "professional" and "would never" retaliate in any way. "Nuff Said.!

Preparing Pulled Pork way in Advance

You should re-post this in the Home Cooking board. That being said, Why not just cook it entirely and re-heat. It will still be good on Sunday as long as it's stored properly. For what it's worth, I have had pulled pork that was frozen and re-heated and did not like it, the texture was dry and stringy.

Ice Cream, What Flavors are Your Favorite and Worst?

Favorites are any high quality chocolate, vanilla, coffee & chocolate chip. Worst are rum raisin, banana & pistachio. I hate raisins and bananas, although I love pistachio nuts, the ice cream tastes nothing like them, it tastes like almond flavoring, which I also despise.

The brown style of Lobster sauce for the chinese/polynesian dish "Shrimp with Lobster sauce." Growing up in CT & MA, that's what it always was. Rich & garlicky & eggy with ground pork in it. When the polynesian restaurants went away, and the restaurants were doing more Szechuan style dishes, it somehow became the white sauce. I have tried to make it, but it's never quite right. Would LOVE to find it - thanks

foodmill question

Yes, it removes the seeds, as long as you use a disc that won't allow them to go through. I don't use mine that often, mostly for tomatoes, but I like having it, as it sometimes is really the only tool that will do the job without making a ton of work for yourself. I don't think that they are very expensive, you might want to look in a thrift store first.

Cabinet Cleaner

I use Simple Green, undiluted, on my wood cabinets. It removes the grease, and doesn't leave a residue. I don't even rinse afterward. Works great for me.

What's Your Earliest Conscious Food Memory?

Daddy would make me breakfast, cleverly named "egg on top of toast", a perfectly cooked over-easy egg on toast and would cut it into nine perfect squares. I always saved the middle crustless one for my last bite. One day Mommy made it for me, but just cut it up willy-nilly and I cried because it wasn't right and I wouldn't eat it.

Best ice cream in the country.

If any of you live in the Cincinnati area, you really should try Aglamesis Brothers Ice Cream. They have been around since about 1920 or so, and have two stores, the original one in Oakley, and another in Montgomery. IMO, Graeters can't hold a candle to them. No, they don't sell their ice cream pre-packaged in grocery stores, but it's worth a trip to go to the shop, especially in summer when they make peach ice cream and sorbet.

Hi, sorry to bump this thread without a response, but bestrep is my sister and I wanted to try to help her out. She has been going to the Gift Mart/Peachtree Center for many years, and they always go to the same places, year after year. She's brand new to Chowhound, and really hoping that you can help her find some new places. Yeah, way easier than trying to do that with a knife. You're not pointing sharp things at your hand and fingers, and you won't accidentally go too deep and split them in half.
