Spicy Tomato Soup

Simply filling and delicious. I love the spicy, but the husband is a bit more sensitive, so I recently made it sans chili flakes and it was [almost ;)] equally as delicious.

Peach Frozen Yogurt

I was craving frozen yogurt and was wondering just how hard it would be to make myself when I came across this incredibly easy recipe. I stayed true to the recipe but added a couple handfuls of frozen raspberries I had in the freezer which added a nice color and texture to the yogurt. I really liked the texture of the yogurt the first 24 hours, but after that it got a little tough; not impossibly so, but it was no longer the creamy texture that made it easy to sneak a spoonful when the craving struck. Great to eat with Speculoos!

Vegan Lasagna

Neither my husband nor I are vegan, but we wanted to try a lasagna recipe with a healthier twist. This recipe was perfect! We cut the recipe in 1/2 (as it was just the two of us) and it has served us over the course of 4 mealtimes. We took the suggestion of GustiaFood to tastify the tofu, and we did add about a 1/4 cup of fresh shredded Parmesan cheese to the top in those last 10 minutes. The only downside is that this recipe is VERY time intensive, so certainly not something to whip up at the last minute. The taste and quantity, for us, made it worth it in the end anyway!
