Cheese Lovers Dream

I just bought Asiago Cheese from Costco from Italy. Oh my, The fresh is decadent. Creamy and really flavourful in a wholesome way. I tasted the aged Asiago "Malga Lambara" and it was like a fine wine. Wonderful on the palate, nutty and then continues on all around your tongue. Since when did Costco have something other than the usual 27 cheddars??

Whole Foods in Lincoln Park - Where do you shop and why?

I have been going to Trader Joes for a long time and still find the quality better and the prices very good. The mark-up on many products seems more than fair. Dairy items as well as organic milk, cage free eggs and the wonderful cheese like the italian truffle cheese that I put in my omelettes all have much better prices than Whole Paycheck.

Affordable Parmesan?

It's not legal to call US bubbly champagne and it isn't legal to call american parmesan parmigiano- reggiano. They do it but it is not correct to call it that. Unfortunately there needs to be more education in the food industry. Even some professionals are ill advised.

Italian bread search - "ciopa"

My husband grew up in Roseland and we go to Italy often. I Chop-ee di pan is difficult to find even in the veneto today. Chopee (I have no idea how to spell it properly and I lent out my italian food dictionary) is a pasta (dough) that is worked intensively by hand and it has a firm texture. The bread your uncle probably remembers had "cornetti" pulled out bumps almost like large jacks we played with as kids. I think there is a family bakery in wisconsin or you can actually go to Italy and there is one bakery near the Marco Polo airport in Venice That still does bread like that. My husband has brought them back for his dad and buddies who all remember that special bread from Roseland.

ASIAGO DOP

Wow! I think you are the first person who actually knows what they are talking about in regard to Asiago and cheese. Bravo! My husband and I have been selling DOP Asiago and about 10 other cheeses from Monti Trentini in Grigno. It has been a major undertaking with education being a primary goal. We started this because the Asiago cheeses were so terrible in The US. The fresh cheese or pressato had no holes and tasted like nothing because it was sent to the US without any aging and it never reached its potential. Ours is the best available in the US because of the milk primarily and how it is treated secondly. The commitment to quality is well known in the industry but unfortunately distributors want cheap hoping the consumer won't notice. We think everyone does notice the better quality, taste and texture of a great product. Hope you get the chance to visit Asiago and tast the great cheeses from the region.

where to buy cheese in chicago?

Naturally smoked provolone goes great with beer. Treasure Island carries one called pan di cacio from italy. Aged asiago goes very well with your Belgian beer. Sam's club got a great one too. Check out the aged asiagos from italy at Treasure island.

What is your favorite cheese splurge?

Asiago aged from Sam's club is a great raw milk cow's cheese from Northern italy. It's a wonderful party cheese because it goes well wth wine (pinos or chardonnay, petit chablis) It also is a great one to melt on anything from burgers to bruschetta. Sam's also has a naturally smoked provolone that is wonderful with beer. Super popular and isn't processed cheese food like those fake gouda rounds everywhere. Try trader Joe's Italian truffle cheese too. Wonderful with eggs or just snacking for something yummy.

Three Cheese Mac and Cheese with Panko Bread Crumb Topping

I can't wait to try it tonight with italian Asiago aged not domestic which is so sour. I made this with fresh asiago butter, flour and milk and topped it with grana padano and panko bread crumbs. I am flight attendant so I do all my grocery shopping in Europe. Ymmmm..

What is your favorite cheese splurge?

I used to love the Asiago Aged at WFM but was dissapointed to see it replaced with some other brand. It had a beautiful dark brown label and crystals in it. It would fill your mouth so that you could actually breathe it. Fabulous with an amarone or good pinot noir. Seems to me it was Trentini Monti. If anybody can find it please post it.
