I have had the "Natural wine" discussion with many people and the general conscious I get is that it will remain a miniscule portion of the market. Beyond the inherent problems with actually consistently making wine there is the question of financial stability. Pretty much every winery tries to keep their place as clean as possible, some do better jobs than others and if you are making wines in a "natural" fashion and your winery isn't like a lab you are far more likely to get something going that you don't want and poof, you have no saleable wine. In my eyes it is sort of like the "raw food" movement, you've heard of it but don't know anyone who actually adheres to it

It is the delivery system that comes into play. Coravin barely pierces the seal going in through the cork. In the past we always used Argon but you still had to displace the wine with air first. Coravin keeps it a closed circle

PaaDee, Thai Comfort Food for dinner, Harlow's for breakfast the next morning

I live in the building that Paa Dee is in and eat there frequently, probably once a week. It is a vastly under rated spot with very few weak dishes. I think the characterization of it as standard Thai fare versus Pok Pok is not really "on" . I will readily admit along with almost any other person in Portland that Pok Poks wings are the legal version of heroin, I just am not a huge fan of long waits which are the norm at Pok Pok

Coravin is pretty legit, as someone who works at a winery we use it frequently in our tasting room on very limited items that we want to last and only show to certain visitors. We have found that we can make a bottle last weeks with no discernible loss of integrity

At the most basic level this is a private event and they have the rights to set the rules. As noted in the article it was initiated by Distributors and has a strong distributor influence to this date. Anyone who has participated in this event knows it is one of the largest drunkfests in the country and is not too conducive to sales anyway. Starting about ten years ago many wineries and winery groups started pulling out as this is a very low ROI

Planning Portland/Willamette Valley Trip

Depends on how old you are and what scene you are looking for. Portland is a very unique and diverse town. If you like old school stay at the Benson downtown. Walking distance to everything (Portland is a relatively compact city). On the east side of the river the Jupiter is a retro hotel with a great bar and live music scene.
In the Valley the top end is the Allison in Newberg, good resto and spa, 50 wineries within 10-15 mins. The Black Walnut in Dundee is a great B&B with terrific views and right in the heart of the Dundee Hills AVA. Visit Alexana, Penner-Ash, Bergstrom and Adelshiem all with great tasting rooms and top flight wines

There is a winery in Newberg having a "Tapas & Tango" night with music, food from Toro Bravo, wine (obviously) and tango dancing. Any other 'Hounds going? It is at Penner Ash, I am on their mailing list and got an email about it last week. We are in already should be fun, it is on Fri Feb 10th

One of the issues is that you can not purchase any type of alcoholic beverage and bring it on to a licensed premise. Therefore in theory you shouldn't be able to have the spirits and then convert them to cordials. Very grey area

I have the Pasta extruder and it was a total waste of money. Buy the roller set, far more expensive and can only make flat pastas but great. Consider the Pro 600 Kitchen Aid, it is larger and the gears are all metal vs plastic in the current Artisans

The eggs were on the bar last week at lunch. Brassiere Jo is an under rated spot in my opinion. The entire hotel is under the radar with exception of the rooftop pool in the summer. I think it is consistent and tasty. Not every meal needs to be a mindblowing experience. Consistency counts and you get that at Brassiere Jo

Oak Room is the answer in my opinion. Also being a hotel they are less driven to turn the table, so you can savor your meal and read without feeling like they want you out of there

Totally agree with Adamshoe, I have had same experience. There is a Pasta extruding attachment that is a total waste of cash, avoid it. As far as the Ravioli roller goes I have heard it is a bit difficult to control. Probably easier to go by hand after rolling the pasta in the KA roller set
