Mid-day Saturday and Sunday are indeed the busiest. However, waiting by the firebox is a non-issue at Kruez.
More so at Smitty's. Where the line will be for the most part, outside the (rear) entrance door. Remember to come through the rear door in the parking lot. And then once inside, only a short wait in the pit to order your food. Believe me, It will be worse waiting outside than inside if it's a hot weekend.
At both Smitty's and Kruez, the family can always buy the sides in the dining room and sit at one of the long communal tables while waiting for you. But, they can always peek inside the "pit".

Unless you've already been, ya'll should be sure to visit the "Old World Sausage Company" in Shed 2 of the Dallas Farmers Market. It's a small piece of Chicago here in Dallas.

They get some really big ones from Tomales Bay.

If the OP hadn't specifically asked for BBQ in Lockhart, I also would have recommend Louie Mueller BBQ in Taylor.
Their regular sausage (not jalapeno ) is the best anywhere.
As is their melt in your mouth brisket and giant beef ribs.

Right! If I'm going to go "out of my way" to eat Thai. it's going to be Royal Thai or, Bambu. Bambu would be my first choice for "destination" Thai.

But, if you're near Bangkok City, then by all means, go! Their food is very good.

We had lunch at Bangkok City again today (Bryan at Peak). The yellow curry Mussamun was (almost) as good as Royal Thai's version.

As good as Bangkok City is, it's overpriced compared to Royal Thai which offers a better value and better food, As does, Bambu.

We go to Bangkok City because the food is very good but for us, a more convenient location than Royal Thai or Bambu.

I've been there for lunch more than a few times over the last 6 weeks. Excellent service and very delicious food. A "hidden gem".

I'd recommend Rough Creek Lodge out in Glen Rose.
Not too large a resort with excellent "chef driven" food and very comfortable accommodations. Lot's to do or, just hang around.

No kidding! I ordered their roast chicken one time and it was fabulous. The second time, meh. I asked why there was such a difference from one time to the other and I was told next time to order a "fresh" roasted chicken vs one thats been sitting around in the kitchen.

I second CocoaNut's and foiegras' suggestion for Texas Land and Cattle. Their regular (un smoked) steaks are pretty good. Not prime mind you, but pretty good none the less. They also do good salmon and a more than decent roast chicken. If you go and order the roast chicken, be sure to ask for a fresh one. Good value for the money. Good for families. And, good old Texas atmosphere!
Also, easy parking in their own NON-VALET parking lot.

Personally speaking, I actually enjoy the frenetic pulse of a busy Dim Sum restaurant.
The noise of busy eaters and the myriad of servers pushing their food carts around the room seems to add to the flavor of the meal.
You can hardly finish one dish without another tempting Dim Sum laden cart being wheeled by your table.
That causes the biggest problem at a Dim Sum brunch. Eating too much and, eating too quickly!

Los Angeles 'hound ISO finger lickin' BBQ!

Since my last post in this thread, I've (very happily) discovered Pecan Lodge in Shed 2 of the Dallas Farmers Market.
Without a doubt, the best BBQ in Dallas! Not only is their BBQ great but unlike others you've mentioned, It's clean, air conditioned and, you can sit down in comfort and watch the "passing parade" while you are in BBQ nirvana. Order your brisket fatty and I guaranty you'll be a very happy camper!
They're open Thursday thru Sunday from 11:00AM-3:00PM.

Also, try any of the Fiesta or El Rancho markets. They'll have what you want.
I think the only real difference is the (natural) annatto seed that's used for the yellow color.

I went to JS Chens once late in the afternoon. They were fairly empty but, they were very gracious and made everything from scratch that I ordered. I was alone so I couldn't sample as many items as I would normally if with a group. But, I remember all was good.

Although I've personally never experienced what you experienced at Pappas Bros., I know that situation would never happen at Al Biernat's. And if (God forbid) it did, a quick word would totally rectify the situation.

Places like Bob's and Pappas Bros. are driven by expense account diners. Al Biernat's is a great, "wealthy neighborhood" restaurant with a local, well heeled clientele that expect the very best. And, they get it there!

That said, in my humble opinion, I think Nick & Sam's offers one of the truest "steakhouse" experiences overall in town. With unquestionably the best and most lively steakhouse ambiance in Dallas.

Thanks for saying about Bob's what I was thinking as well. I've had to go to Bob's with business associates on numerous occasions and I can tell you, I've never enjoyed the food, service or, the "men only" mentality.
