Easy Hummus

aduggins5000, my mom used to use the Middle Eastern brands like Mid East until we realized they contain artificial preservatives. Now we use the organic Trader Joe's one, which took some adjusting to, but with some trial and error she was able to get it pretty close to the original. :)

I recommend Il Cane Rosso and American Eatery, both of which use quality ingredients sourced from local providers. For that area they are reasonably priced; cheaper than say The Slanted Door. Though I'm not sure you'd prefer a full service restaurant.

Hello, I try to avoid vegetable and canola oils due to the high heat chemical processing they undergo as well as their high ratio of omega-6 fats to omega-3 fats. Can I use a more traditional oil instead, like extra virgin olive oil?

Healthy Soda for Grownups

thomas64, diet soda often contains preservatives as well as artificial sweeteners. One such sweetener, aspartame, arguably the most controversial in history, really should have never been approved by the FDA. It seems shortsighted to claim diet soda has nothing bad in it.

There is a middleman (the distributor), but I doubt this is the case since the owner was defending his position that there is nothing wrong with labeling the beef grass-fed. Unless he was influenced by the distributor.

Grass fed beef can also be grass finished though, and sometimes the two terms are used interchangeably which makes the situation even more complicated.

Also causing confusion is I'm not entirely sure on the laws. Can beef be labeled grass fed if it has been fed grass for the majority of its life? According to the link I provided in my original post, it can't be.

This is likely a case of the owner not knowing the details of the food he is serving, as you stated.

The owner's explanation doesn't fly though as I got confirmation from the beef producer that labeling the beef as grass fed violates their rules and USDA rules, so leaving it alone is not an option.

I think mislabeling fish, organic, and grass fed are equally serious. If I'm paying for grass fed beef but I'm getting cheap feedlot beef instead, that's no different than paying for wild salmon and getting farmed salmon.

A restaurant I frequently visit is labeling on their menu a certain brand of beef as grass-fed, but I've confirmed directly from the beef producer that the beef is not grass-fed per the USDA guidelines at http://www.ams.usda.gov/AMSv1.0/ams.f... Prior to this confirmation, I discussed the issue with the restaurant founder and he insisted the beef is grass-fed and proceeded a few days later to show me information on the beef producer's website which stated the cows are raised most of their lives on pasture but are finished on grain. The owner claimed that there is no such thing as 100% grass-fed beef, which is untrue.

Based on the questions I asked the beef producer, the beef producer is now asking me if I have found a place that is falsely advertising their beef as grass-fed, but I am reluctant to respond because I'm unsure of the consequences.

Any suggestions on how to proceed?

Stovetop Macaroni and Cheese

Did anyone find the mustard too overpowering? I enjoyed the dish but next time I'll add a teaspoon instead of a tablespoon. In its original form, my sister recommended to change the name to mac and mustard.

Also, in response to an earlier post, Lay's potato chips healthier than buttered bread crumbs?!

I'm disappointed to see the fat phobia epidemic continuing to run wild. There is a book called "Eat Fat, Lose Fat." Just because it is called fat doesn't mean it makes you fat. :) Not very intuitive I know.

My sister and I made an apple pie using Chow's "Basic Apple Pie" recipe using the lard crust Prather Ranch sells and it was unbelievably delicious. In fact it was easily the best crust I've ever had.

Which Burr Coffee Grinder Would You Recommend?

Hi, can you explain please how you have the knob adjusted for a French press grind? I found the Zassenhaus box mill to produce too fine a grind for French press brewing. I've fiddled with the adjustment knob and found a good spot, but the grind isn't as even as I'd expect it to be from such a fine gadget.

Anyone have a Camano Coffee Mill?

I just received one of these bad boys about a week ago. The craftsmanship and build quality are superb, but after examining the contraption further I came across a concern. I noticed a paint thinner like odor coming from the cast iron portion. I contacted the company and was told that the cast iron is treated with a "black finish" inside and out, but I don't know what is in this finish, and the company seems reluctant to provide any details. I was told it was "100% lead-free and safe," but that's it. The odor and lack of information about the finish concern me especially since this is a device I'd likely use every day. I'm not sure why a finish is even required on the inside since the coffee oils would surely prevent the cast iron from rusting.

How to Eat Less Meat

I think Nina Planck's book "Real Food: What to Eat and Why" contains some fascinating and persuasive information regarding the meat debate. The bad rep that meat has gotten is not because of the meat itself but the way most meat is raised today. I don't believe a truly healthy diet can be achieved without at least some pasture-raised/grass fed meats and dairy. Not the nutritionally deficient and processed nonfat dairy, but the full fat raw dairy which is superior in countless ways.

The Pho at the Academy Café was pretty good and satisfied my craving but was nothing to write home about. It was with chicken instead of beef, so this may be why.

Prather Ranch lard pie crust

Greetings,

Just to clarify, the pie crust Prather Ranch sells is made by Mi2Sweets and comes in sealed plastic wrap in a ball shape, not in a pie pan/tin already spread out for you. The price is $8.99 a pound. Does anyone know if lard from pasture-raised pork is used? I don't see this info on the Mi2Sweets web site.

Update! Interestingly, I stumbled upon the Academy Café while planning a visit to the Academy of Sciences in Golden Gate Park and they have an organic/local/sustainable philosophy, and they serve Pho! I'll report back...
