Gefilte Fish! That makes me laugh! I married into a Jewish family and every Passover....gack. However, I have learned to love that little oval patty as long as it comes from a Jewish deli and NOT from a jar, which looks like a high school science experiment. I also despise cottage cheese. Texture problems, I have no problem cooking with it.
Diabetic desserts needed
My father-in-law is a diabetic. What I make for dessert when he comes for dinner is a sugarless apple pie. You cook the apple filling in a pot with apple juice concentrate and thicken with a little flour, just like a standard apple pie. Whole Foods has a sugarless apple pie that he likes pretty well if you don't want to make something. When my kids were little I used a book I bought when I was pregnant called "What To Eat When You Are Expecting." That book has several dessert recipes that use juice concentrate instead of sugar. I'm not sure about substituting in standard recipes, they are just not the same chemical composition as granulated sugar. If you are making the dessert for a group, they may not like the weird chemical after taste that Splenda or other sugar substitutes have and then no one will eat your lovely dessert, and I speak from experience. I don't have that book anymore or I would have sent you a recipe or two, sorry! Good Luck!

Imnopm, I tried the low-fat clover 'nog. Gross. There are some things that can't be made low-fat. If you're gonna drink it, drink the real thing and be thankful it only comes out once a year, I know I am!
Candy thermometer necessary?
cookiehound here again. I wanted to add that it's important that you keep the tip of the probe in the middle of the liquid and not near the bottom of the pot or you will get a false temp. reading. You might want to invest in a candy thermometer because they have a clip that you can attach to the side of the pot so that you don't have to hold it there.

Sure, you can use a digital probe, just watch it carefully because it can hit the correct temp. very quickly. Good Luck!
Alice Water's Turkey Brine
Oh yea, I usually let it sit out in the fridge overnight for extra crispy skin. I didn't do that this year and it was a big mistake! You guessed it, flabby skin. Wonderful tasting turkey though.

Rosepetal, I use Alton Brown's brine recipe from the Food Network website. It uses 1 gallon of veg. broth, I use store bought quarts, 1 cup of kosher salt, some spices, and you only have to brine it for 12 hours. I usually brine it overnight and it is not salty at all, just nicely flavored. Good Luck!
What did I do wrong with my pie crust?
You might not have added enough water. I usually add at least 3 or 4 tablespoons of ice water for a one crust pie shell. But humidity will affect that I know. Cook's Illustrated Nov. and Dec. issue has a foolproof pie dough that may work really well for a humid day. I have some of this dough chilling in my fridge. It has a nice smooth texture, I think it will be very easy to work with. Check it out on their website. Good Luck!
Hannukah Help!
I always make a baked fish dish. Stay with me on this.....It is from the Williams-Sonoma website and it is really good with latkes. It is a sweet and sour dish with currents and onions. Take a look at it. Or sometimes I do a couple veg side dishes and serve egg noodles with sauted onions and cabbage. I wish it was later in the month like it was last year. Another big meal! Oy!
Thanksgiving Pies
You can never have too much pie at the gatherings. They are good for breakfast the next day. I love mincemeat pie but my in-laws are not that crazy about it. So I usually make pumpkin and apple. (yawn). I would love to mix it up but my family feels so strongly about the dinner being the same every year! Acck! Does this drive anyone else crazy? Or is it just me?
Runny frosting! What am I doing wrong?
This is what works for me every time. Two sticks of unsalted softened butter that I cream in a bowl for about 15 seconds. Add one cup of sifted powdered sugar and mix on low until blended with the butter. Add another cup of powdered sugar, same mixing process. Add one more cup of powdered sugar, blend, scrape down bowl, then add a TINY pinch of salt, one half teaspoon vanilla extract, one half teaspoon almond extract then beat at high speed for about a min. Scrape down bowl and add 2 or 3 tablespoons of milk, beat again, and use. Good Luck!

When I was pregnant with my first child I had awful morning, afternoon and evening sickness for the first 3 months. and was on the toast/cherry cider diet. I lost 8 lbs. When I finally felt better, I had a craving for Mexican food that was intense! I had to have to EVERY day or I would get upset to the point of tears. My second pregnancy, it was vats of mashed potatoes and Thai food.
