What's for Dinner? #146 - Memorial Day Edition

you are too funny! salads are indicated chez moi as well....

jfood's Salmon Croquettes

Someone over on the WFD recently made them using almond meal instead of crumbs, which I have queued up to try soon. Hmm, can't find it to link, but here is someone else who does that: http://chowhound.chow.com/topics/713526#5682255

Collard Green Wraps - Question

I would blanch them first in plenty of boiling water, they'd be awfully tough otherwise.

Fabulous, a great way to celebrate being back in one's own kitchen!

Droolworthy pics of yummy food!

Sounds like amazing deliciousness! I will echo mariacarmen that it is so tough to see the loved ones aging poorly but now it is all about creating happy memories which you did in spades with your feast and sisterly cookfest this weekend!

Thanks so much CM, I thought as I read it that I might skip the cheese, glad to know that worked out OK. Other than that, looks exactly my kind of salad, can hardly wait to make it next weekend!

You will find it is like having a fat balance in the bank. I am always happy when I cook ahead on the weekend and mad at myself when I can't or don't. Care to tell us more about the broccoli-tomato salad? I, for one, am intrigued....

I can hardly wait!!! Thanks, mc!

Been away since this thread started and just now sat down and read through it and, my friends, you are all a bunch of culinary geniuses and paragons! I want every single thing I just read about! Wow.

My weekend was memorable mostly for non-food-related things but I have no complaints. My oldster's garage freezer gave up the ghost and one of the few things I salvaged was a lovely veal chop which absolutely had to be eaten tonight, and since he is in a rehab facility recovering from surgery, I volunteered. Chop was grilled, topped with some roasted garlic-parsley compound butter and sided by an arugula, endive and tomato salad with a simple lemon vinaigrette. Libation was a crisp chilled Provencal rose. All very nice but me, I am still too parsimonious to get into a veal chop habit, if splurging prefer lamb chops.

My (very cool SoCal) aunt has made that Island Pork Tenderloin Salad for parties for a long time, it's a definite keeper!

Dangerous, shecrab, it's like feeding skunks, ya know. (But holy moley that food sounds fabulous.)

mc, SO HAPPY to hear the boot is taking the horrible pain away -- YAY!!! Now, the burning question: how thin must one slice it? And hot oil over high heat? This could change my life...

What's for Dinner? #146 - Memorial Day Edition

YAY on your kitchen stuff Gembellina! It must be like Christmas in May!

Tonight will be a B.L.A.T. salad, the dressing is made and lettuce washed, so no matter how tired I am when I get home I should be able to get that put together. I am debating the relative merits of rum and tonic or gin and bitter lemon (the Fever Tree bitter lemon is completely amazing stuff). There might be goat cheese crostini too but that might actually be beyond me at this point. I wish the dog were more competent in the kitchen but there is both the lack of opposable thumb and the lack of impulse control around food working against him, to say nothing of his being vertically challenged.... OK, I am babbling, please god don't let me do that on the phone with a customer. Happy weekend everyone!

I am so sorry about your poor foot but at least now you know and are getting it treated and probably fracture heals better and faster than sprain so in a funny way it is kind of good news, isn't it? And how IS your back?

What's for dinner #145 [old]

You know, in very un-chowish fashion I am not crazy about dark meat but I am thinking about making these for the skin alone -- the dog loves dark meat so it won't get wasted!

I vote for vinaigrette and the cheesy rice casserole. I'm just mad that by the time I caught a flight out there it would all be gone! Enjoy and you have a safe and happy weekend too!

yeah, you gotta go whole hog next time, rox :)

it sounds yummy and the mini samosas a very nice addition to your bounty of bbq

I love the use of almond meal instead of crumbs -- I'm going to try that with the next batch I make, then they can be guilt-free! Where should I look for almond meal?

Hey, every little bit counts. Same logic as ordering a diet drink with one's pizza. :)

That pasta bowl sounds FABULOUS.

Well good, he is receptive, that is a great start. Your second helping of dessert comment made me smile. When my aunt moved into an assisted living facility she was initially mildly scandalized that everyone ordered two desserts every night. She never admitted it but I suspect she may eventually have gone over to the "dark side", because after a bit it never got commented on. The director told me that they made enough dessert every day for everyone to have two as a matter of course. One of the benefits of age is eating pretty much whatever you want. :)

Good luck you are a terrific person to take this on!

Fresh montreal bagels

everytime I have been there they have had smoked meat in little cryovac packages, in either the fridge or the freezer

Your salad sounds like a perfect solution to the carbonara conundrum. Very sorry to hear about the broken pipe, that's awful!

that is FANTASTIC mc, I am so happy for all of you! Must look around for those Boosts, are they near the Carnation Instant Breakfast?

Make ahead meals for Elderly

Good call on the Carnation Instant breakfast, mc, mine will drink those if done in the blender with a couple of ice cubes to get a bit frappucino-ish. At least, sometimes he will...

Posted as you were posting this. You do have a set of challenges, don't you? Instructions are clearly the way to go. And if you do find some things he likes (very soft beef stew or whatever) you can make some extra portions to keep in your freezer and send over days when you are crunched for time. Good luck!
