Pathetic state of burgers in Winston and Greensboro
The local restaurants seem to think that serving a frozen, dense packed, dry burger is what we should eat. They cook it to well done, and do not even attempt to brown the outside of the meat to develop the flavor. They may advertise Angus beef, but I believe this means nothing. It is the cuts of beef that are in the patty that matter most. The result is a burger that is not worth eating.
I believe a good burger should be made with freshly ground chuck or brisket, or sirloin, or a mixture of the cuts. The fat content should be about 20%. It should then be loosely formed (never packed), and formed to about 1 inch. Cooked on a very hot grill or flat top (500 degrees) it should be cooked on each side to develop the maximum Maillard reaction (Browning) and finished to no more than medium.
What is so hard about this?
The so called French fries are mostly a frozen product that is served when dry, tough, cold, and limp.
Truffles Hilton Head
Reacently I dined at Truffles in Sea Pines at Hilton Head after many years of enjoying this restaurant. I now beleive this restaurantt has been reducedd to just another chain restaurant.
I had the ham and brie sandwich which was terrable. The Croissant appeared to be a frozen varity. The ham could have come from the deli at the loccal Food Lion, and the brie consiste of two small slices. All of theis was served cold. The so called french fries were a frozen potato product with a coating to make them seem crisp even after an hour on the plate.
Since they associate with Ruby Tuesday they seem to have reduced their food to the chain level. Yuck!
Mario's Pizza Clemmons, NC
On wednesday, I had called in an order for a pizza based on the price shown on the Web. When I arrived to pick up the pizza the price had increaded by about four dollars. I then looked at the price on the menu that was on the counter. The price on the menu was the same as the web. When I asked what was going on I was told that prices had increased , but they had not bothered to change the menus. This is a vary poor way to run a business.

My experiance at Old Euroope did not match your experiance. The food was aceptable at best and the service was some of the worst that I have experianced in the area. I had the bratworst sandwich with German potato salad. The bratworst was a very small serving with very little flavor, and the potato salad was perhaps a 1/4 cup serving.

Shem Creek Bar worst meal
Recently my wife and I dined at Shem Creek Bar and Grill in Mt Pleasent, and it was perhaps the worst meal that we have ever experianced. We arrived at about 2:30 PM, after a trip to the beach. We ordered a combination seafood plater of shrimp and oysters. When the food arrived there were five small shrimp and five overcooked oysters the size of marbles on the plate. the french fries were greasy and soggy and the hushpuppies consisted of three the size of marbles. When we told the waitress that we had asked for crisp french fries,, she rolled her eyes and walked away.
Shame on me for not listing to the Chowhound advice of not ever going to Shem Creek area for food.

The best market in the area is the Super G in Greensboro. It is as lage as any regular american grocery.. It is located on West market street in Greensboro. There are many post on Chowhoud about the market.

I was reccently in Charleston for a week, and experianced on several ocasions, the rounding up of the bill. When I received a bill such as $35 50, the restaurants chargged me $36.00 when the change was returned. Is this a normal practice in other locations or just in Charleston?

ISO Hidden Gems in Greensboro and Winston Salem NC
The review for o'So Eats sounds like it was written by one of the restaurant staff. I have visited this restaurant and would not return. The prices were low, but so was the quality.
This is just another of the many Greek run restaurants in Winston-Salem, and you can not expect anything special.
Bagels in Tarpon Springs
Does anyone know of a good source for bagels in Tarpon Spring or on the North side of Tampa.

We will be in Tarpon Springs in June and are looking for a good Sunday brunch. We are open to any kind of food within 30 miles of Tarpon Springs. A price range of $15 to $30 would be good. I have looked at past post, but they are our of date.

I second the Motor Supply Company. We live in North Caroling and any time we are traveling in the Columbia area on Sunday we make a point of going to the Motor Supply Company. Great creative food.
Have you tried Tosca in Durham?
We live west of Winston-Salem, where there are no nice Italian restauras, and any time we are in Durham at lunch time, we go to Tosca. We consider it one of the best restaurants for lunch in the area. Excelent pasta, salads, and breads.

Table 16 - Greensboro
We had lunch at Table 16 in Greensboro today, and it was one of the best lunches that I have experianced in a long time. My wife had the oyster poor boy, which had perfectly cooked oysters topped with carmelized onions, on a grilled ciabatta which was served open face. Three sides accompanied this sandwich--a small baby greens salad with a homemade dressing and a slice of brie and pea sprouts, buttermilk coated homemade onion rings, and a large serving of fresh nectarine chunks.
The menu offered to just let the chef create a meal for you, which is what I ordered.
I was served seared escabeche (tuna) over new potatoes, fried fresh okra, pea sprouts, authentic andouille sausage,and with a onion garlic sauce.
We will be returning to this restaurant.

Skillets-Hilton Head
We went to Skillets for breakfast on our last visit to Hilton Head and will not return.
I ordered coffee and the biscuits with sausage gravy. The pot of coffee that was served was instant, not brewed. The waitress told me that it came from a machine. Ugh! The biscuits were ok, but the sausage gravy either came from a can or was a frozen product. Not wort eating. My wife ordered the french toast and said that it was gummy and some of the worst that she had eaten. I can only guess what lunch or dinner would be like, but will not try to find out.
Bella Napoli Clemmons
We just tried the new restaurant in Clemmons, NC and were greatly disappointed.
The lasgna was nothing more than lasagna noodles that had been split into thirds and layered with meat sauce (no ricotta cheese) and then covered with cheese. The garlic bread was half of a sub roll covered with garlic butter and toasted.
The chicken parimgiana sub had mushy, but yet dry chicken with no taste. It was served with a bag of chips.
We could have done better at one of the chain (ugh) Italian restaurants.
This restaurant is in keeping with most of the "Greek" restaurants in the area that offer very low quality at cheap prices, except the prices here were not that low..
how to cook 10lbs of pork shoulder?
I have cooked many a pork sholder (Boston Butt 6-10 lbs)) I salt the pork well and
place it on a V rack. I place the pork in the oven at 350 degrees, and after one hour, I reduce the temperature to 210 degrees, and cook for an additional 10 hours. The pork is always tender and falling off of the bone. Cooks perfect every time.
Trying for Truffles in the Triangle
There was an story in the Winston_Salem Journal on Jan 19 about truffles. It said that the Lantern Restaurant in Chappel Hill was using North Carolina truffles. You may want to access the story at the Journal by doing s search for truffles

Tuscany Grill is long gone. That location is owned by the local Greek restaurant plague. Winston-Salem has become a city of Greek run restaurants. They are mostly very dirty and serving very veery poor quality food. If you want real Italian food, in a decient atmosphere, you must go to Greensboro.

Coco's Cafe in Mt. Pleasent, close to Charleston, always has great lamb shanks at great prices.
Greensboro, Winston-Salem, Charlotte Asian Markets
There are two good asian markets in Winston-salem. The first is on Peters Creek Parkway on the west side of the road not far from Business I-40. the second, Oriental Oasis, is on Lockland Av.
Greenssboro is loaded with asian markets.Greensboro is home to a major refugee relocation agency, and thus lots of markets and restaurents. I would start on Spring Garden Street where several markets are located. There is also a good market on High Point Road.
