New Orleans Restaurants

Thanks everyone. I have added Brigtsen's, Lilette, Commander's and Cochon to our reservations list. Also, we will visiting beautiful, downtown Lacombe to have lunch at La Provence and dinner at Sal and Judy's, a joint beloved by the locals.
BTW, last year I had a mediocre and expensive dinner at Cuvee. Herbsaint is another one to avoid - I thought the service was not up to the cuisine.

I've been to Galatoire's for lunch twice. Excellent, and I do plan to have lunch there at least once next month. Talk about old school.

Salmon Mousse [moved from L.A. board]

Anybody have a proven, killer recipe for an authentic salmon mousse? I am looking for a recipe which uses poached salmon, gelatin and a mold. Thanks.

Thanks for the enlightenment. I have several zydeco albums which get played quite a bit. My wife and I went to NO and Lafayette for the first time last January. We had a blast. Have you ever been to Grant Music Hall in downtown Lafayette?
