Guatemala: Restaurants, street food and more
I've been loving your Guatemalan updates. I spent a few weeks there in Feb & March and am planning to return in Oct.
I cook all the time and ended up lucking out and getting to stay at a house where could shop the Antigua mercado and cook most days. I found the produce chicken and eggs to be really nice and the beef a bit tough. When I return I will be getting a meat hammer.
Anyway, I wanted to weigh in on the Antigua restaurant scene as I did eat out many times.
Bistro Cinq: expensive, loved my meal, had great service
Cafe Condesa: nice for breakfast, lunch or a sit down coffee. really friendly service
Dona Luisa: good for afternoon sweets, coffee or liquados
Fridas: this was one place I would not return for food. It's cute and I would go in for a drink but I was unhappy w/ my food. I live in Southern California so I think I'm used to GOOD mexican food and and this was not it.
Pescador Italiano: It sounds like this is the mediterrean place listed above. Had a really nice thin crust pizza here with proscuitto and arugula. A pizza to prevent homesickness.
Panza Verde: really beautiful, expensive and very good food. Special occasion place
Sabe Rico: very nice patio, vegetarian friendly. Good but nothing special food
The Mercado is the favorite for me. Also outside the market is a little sit down w/ daily platos. I think it's about 35 Q. Fried chicken day, soup, salad, bird, tortillas, beans. Yes, please.

Recs for Guatemala
I'm more of a reader than asker, but you always seem very on it. Anything new? A pretty spontaneous trip has come up. Booked today leave Friday. Antigua, Guatemala City, Atitlan(I think eating mainly in friends home here).
Will most definitely check out Antigua market.

Marmite [moved from Quebec board]
i didn't taste marmite until I was an adult but this has become a staple comfort food for me... nice firm bread toasted+thin marmite+med thin layer cream cheese+ pickled red onions &/or fennel. It's heaven. Particularly good when you are recovering from a cold. With a glass of icy ginger ale.
Braised meat technique: to flour or not to flour before browning?
I'm sure everyone has an opinion about this but I find always happier when I do not dust the meat w/ flour. With that said I do make tiny roux on my mirepoix. that gets done after the meat has browned and before it goes back in. I love the bit of thickness it adds to the sauce but I not right on the meat.
Also so jealous of your venison shoulder.
how to make macaron? (moved from France board)
A pastry chef friend told me that I must let them hang out, after being assembled for 2 days to get to develop that bit of chewiness. That part is very difficult because I love them so.
Making Twinkies at home
There's a lemon cake online where you add a package of lemon jello to a box mix. It's really moist and a bit weird. Maybe you could adapt w/ yellow cake and plain sweetened gelatin. I can't remember the last time I had a Twinkie, but I know it's very moist and sweet and definitely shortening flavor filling.

For who those didn't cook or go to a Thanksgiving Dinner
We were supposed to go away but had had a really hectic week and woke up not wanting to pack up the van and drive, so stayed in. I had not planned a meal at all and didn't want to brave the market so I made a meal from the back yard garden. Roasted fennel, garlic and habaneros in olive oil, pureed it and made it into a sauce w/ some chicken stock(made w/ star anise) and a splash of cream. Tortellini from the freezer thrown in all served on a bed of watercress, also form garden. It was so good it's going into our regular rotation. And I thought I was a bit clever for it being a "harvest dinner".
ISO: Greek-Style Roast Chicken
I prefer lemony Greek chicken, so I would rub the chicken inside and out w/ olive oil, oregano and S&P, then roast it w/ garlic and lemon halves in the cavity.
Good Mexican with Great Margaritas
It's a bit silverlakey, but I really like the cucumber margarita @ Malo. Food is okay. For some happy hour apps and a pick me up, it's cute.

would you buy a panini press
I've definitely given a panini machine as a gift that's still(years later) raved about.
In my home I use my grill pan w/ my tea kettle sitting on top. Works great.
Italian (Sicilian)yellow cornmeal cake???
A couple years ago a friend made a cornmeal cake cake w/ me. It was coarse cornmeal, grainy, not too sweet and very moist and lemony. Absolutely delicious. I think it was a bundt shape, defitely not a lamb, but of course if I had a lamb shaped pan, things may have been different.
Best way to increase shelf life of certain things
Without a vacuum sealer you can extend the life of your cheese by cutting it into maybe 3 pieces. Wrap 2 really tightly. Keep one to eat from. Less opening, airing, touching will gve it a longer shelf life.

yes, this was my instinct. I'm not a butcher(almost wrote bitcher but that would be a lie) but the pics look closer to a chest/brisket cut than the belly. So many meats are cut differently depending on region.
I think if you have a good pork supplier/butcher they would be happy to make you some.

Sorry, I think you misunderstood what I meant. I didn't recall a "lady" in the OP. I always thought a "lady" had enough manners to know you don't steal someone's seat and then say something rude about it upon their return.
If a lady walks into a bar and gets offered a seat, that's something else entirely.

Bay leaves--anything interesting you use them for, besides meat dishes and...
If fresh, maybe 5-small handful. Dried maybe 2-3. They get strong fast, but you can definiteley go light or supplement w/ a little honey. Also a little orange zest in there is nice, esp if you're going to be using it in Greek yogurt. mmm
I think you could steep bay leaves into your liquid for yeast. I'd probably use at least part whey or something not straight water and break the bay leaves in half to expose the oils and still be able to get them out easily.
If you do this let us know how it goes.

Everything above and how about bay simple syrup. You can use in cocktails, yogurt or to sweeten homemade lemonade.

I've used a lot of cuts at different times of the year and the flavor does change, but always amazing.
If you call ahead they'll bring you something they don't always have or hold meat for you.

I'm surprised how many people are opposed to this idea. If i went out of town and came home to a delicious treat made on my new pizzelle maker, I'd be thrilled. I think it's cute and thoughtful.
I don't get the idea of "christening an appliance" It's an appliance. The first time they use it will still be the first time they use it.

Ideas are popping into my head of newly styled leftovers w/ lovely salads
mushroom soup, I agree w/ almost anything mmmm
cream of asparagus or spinach w/ deli ham or turkey, swiss and ciabatta or maybe rye
creamy scallion soup w/ leftover fried rice instead of bread, maybe a little cream cheese for decadence
salmon chowder, onion rolls or pumpernickel, and crumbled bacon
pureed black bean soup,w/ crema, milk or sour scream, corn bread, chorizo and cheddar
The possibilities are as endless. I thank you in advance for for my easy summer lunches!
Suggestions for Leftover Salmon Filet?
I'm not a recipe gal and I'm not super traditional. When I do a kedgeree dish I use the fish, flaked and rice tossed in w/ sauteed onions and herbs(cilantro, parsley and maybe scallion). I like curry powder in mine and think toasting it a bit in a dry pan before use makes it better. I also absolutely love some currants or raisins in there for some sweet bites. In the morning I'd top w/ a poached egg or later in the day just a little mango chutney on the side.
