thanks, ya'll! i wanted to grill it but it's been pouring rain all day. i prepared it with butter, lemon, white wine and capers in the oven and it was very delicate and delicious. served it with couscous to soak up the sauce, and roasted asparagus. will do again. :-)

Thanks for that. I remembered that from awhile back and looked for it but didn't see it. My best girlfriend from Jackson, MS is coming down tonight (to Baton Rouge) and she loves to try new stuff so I thought it would be fun. We are so excited! Gotta go take the potato salad out of the fridge now so it will be room temp and not so cold, as someone suggested. Of course, my boys are gonna roll their eyes...

My son's 9 yr old baseball team is having a pool party. I want to bring a great appetizer, but don't really want to bring a dip (because boys will be boys and double-dip). What is a good pick-up appetizer that both parents and kids will like? I would love something really different but not too fussy. Thanks for your help!

Bacon, Lovely Real Bacon Microwaved
I use the paper plate too, but once in a while, I cook it on the stove to get the good bacon grease in which to cook my boys delicious runny eggs. I am from the South after all..
Fried Chicken ... to soak or not?
I pan fry it just like my mom and grandmother did. No buttermilk, just soak in ice water for an hour or so (Mom said it pulls the blood out - ? - ). Anyway, I pat dry, season real well with Tony's, flour it, and fry in a cast iron dutch oven, in about an inch of oil, taking care not to crowd. It takes quite a while, but well worth it. I have to take care not to over heat the oil and burn it. I think it's just one of those things that you just have to practice doing...... I love, love, love, fried chicken cooked at home - although Popeyes is pretty darn good too. :-)
