for how long at what temperature? I'm thinking 15-20 minutes at 400 F?

My husband bought home some fresh homemade manicotti yesterday that we are having tonight. I am simmering a marinara sauce for it now.

So when we are ready to eat, do I heat the manicotti in a baking dish with a tiny bit of olive oil? Or do I cook it in the marinara? It's just cheese, so I only need to make sure the pasta is cooked, but fresh pasta cooks so quickly, I don't want to overcook, and adding the sauce may make it goopy? The manicotti are the basically the size of a long, flat cannoli.

So I had a bahn mi many months ago at a take out place that is near the Holland Tunnel. I can't remember the name. or specifically where it is and my cursory searches on chowhound and google aren't bringing anything up. I'm sure someone on Chowhound knows it more quickly than I can find it so I'll just ask- Does anyone know the place I'm talking about? The sandwiches are like $5 and its just a take out shop. There sell other Vietnamese sides and might have juices there, as well. I'd like to go tonight if I can figure it out. Thanks!

This sounds good but Mama to be does not care for creamy textures, which is usually where my mind goes to for "light" in texture and possibly sugar, not fat.

Ghealthgormet- I would prefer to do cheese but i think i am the one who will enjoy that most of this particular crowd. Out of curiosity, what are your go-to dessert cheeses?

Other dishes being served: scones, ricotta crostini with figs and honey, fruit salad of some sort, veggie salad of some sort.

Just found recipe for blueberry and pretzel clusters cocered with chocolate. May do white chocolate and see if it's prettier. Love that sweet salty combo, plus she's a big pretzel fan.

that sounds beautiful! i am a huge fan of sour cream and coconut.

Unfortunately, one of the other desserts I am making is a sour cream chocolate chip coffee cake (smitten kitchens)! so the two together may be sour cream overload!!

Haha mamachef- totally stealing that -Irish flu! Love it! (though i hope not to have to use it for my own purposes for a very long while!) Similar to a other favorite of mine- the "catholic tax" which is the burden of paying two rents until marraige! But thanks, yes, the greens and starch were just what the doctor ordered :)

Im making a somewhat labor intensive cake for a friends baby shower next week. Since im also doing drinks and decorations, I am trying to think of a light and pretty finger foodish dessert. My mind went to bananas. I'm sort of talking myself out of it now, knowing go hard it can be to find bananas at the right ripeness when I need them: BUT, thought I could cut up some bananas with something else, stick a toothpick in it and voila! Dessert, assembled rather than made .

I should mention there will be some other fruit salad in the pre dessert part of the party.

The other dessert is crazy chocolate-y so looking for something that isnt über sweeT- again, talking myself out or bananas...:)

Any assembled, not cooked desserts that are somewhat light and good looking "recipes" welcome!

my husband doesn't care for berries or raisins, sadly, so i'll have to be cooking for one for the cranberry green onion recipe! escondido, the garlic tarragon sauce looks like a good weeknight meal, too.

thanks everyone. i ended up doing something very basic for dinner. Spring salad with the nigella lawson's salad dressing i listed above. The dressing was primo- i am going to be using this one again and again. The citrus and sesame oil combo is pretty much what I always want in a salad dressing. Vegetable oil is a nice change of pace for dressing, too. i had it with peanuts because i was craving asian and that's what he had on hand.
bought a roasted chicken and then just roasted red potatoes, asparagus and red onion with a ton of garlic and some balsamic. just what the doctor ordered!! :)

that's a good tip. i usually buy big portions of nuts since we eat them a lot, but not usually hazelnuts, though they are delicious. endive is pricey enough! i have all the other ingredients on hand, though so shouldn't be too bad.

i'm thinking of this nigella lawson salad minus the hazelnuts since they are pricey.. now just need something else... not looking for meat recipes but maybe fish, if inexpensive..

BELGIAN ENDIVE AND GRAIN MUSTARD SALAD
Time: 15 minutes.

1/2 cup shelled hazelnuts
1 teaspoon grain mustard
2 teaspoons lime juice
2 teaspoons orange juice
1 teaspoon honey
1/4 teaspoon salt
1/2 teaspoon sesame oil
1 tablespoon vegetable or corn oil
1 pound red or white Belgian endive, separated into leaves
1 bunch watercress.

1. Put hazelnuts into a sealed freezer bag, and bash them with a rolling pin to break them into pieces. Toast in a small dry skillet until browned and aromatic. Transfer to a bowl to cool.
2. In a small bowl, whisk together the mustard, lime juice, orange juice, honey, salt, sesame oil and vegetable oil. Set aside.
3. On a large platter, toss together the Belgian endive and watercress. Sprinkle with toasted hazelnuts, and drizzle with citrus and mustard dressing, tossing to combine everything well.
Yield: 6 servings.

im craving salad, so i'll be adding greens to anything i make. my body must really be in bad shape if i'm craving salad so hardcore!

i want something else comforty and not too greasy, maybe something low maintenance like roasted vegetables and cheese. I apologize for being mildly brain dead at the moment, and defer to you, chowers!

Easy meat recipes for vegetarian to entertain with

I obviously didn't clarify enough- I cook AND eat fish. I don't eat pork, beef, chicken, turkey etc. In other words, I'm not a vegetarian, but it's easiest to describe my diet that way (the majority of people consider it vegetarian anyway, even though its not). Though I eat vegetarian 90% of the time, I'm technically a "pescatarian"... but I find that term so obnoxious I just can't use it!

I'm probably understating just how picky my MIL's taste are, but I won't elaborate!

The veggie lasagna recipe is a good one (I like the roasted peppers), though I'm trying to stay away from pasta as a center of my meals. The main reason it wouldn't work though, is that I stink at making veggie lasagna except in very small portions for some reason. Whenever I do a big tray of it, I'm unhappy with the results, despite it being an objectively easy dish. Just gets all mush.

Thanks everyone for the comments. I hear what you are saying about cooking what I like, but the reality is my MIL is quite picky- Her limited diet is a source of a bit of aggravation between MIL and FIL. Plus, I would feel bad trying to teach someone a lesson about vegetables over dinner or to have her hungry at my home!!

The shrimp and ham would be too exotic for her, eggplant parmagiana is what she always makes for me, and she truly won't touch seafood, unless its fried. Don't want to serve a fried dinner, though it would be good, I'm sure. She doesn't care for mushrooms... Its a tough one! A roasted chicken is something I wish I could do, but I've come to terms with the fact that I just cant handle the chicken.

The pork I think will be fine, just tie it up , sear with tongs and be done. Who doesn't like rosemary, right?

So, how would I ask for the tenderloin at butcher? If serving 5?
