I really wish I could:
Have 5 months to go on a food tour around the world. Not just eating, drinking in great restaurants, but also visiting farms, spending time with friends and family aroiund the globe learning how to cook their specialties, from their region or their family traditions. Particularly I want to do that with my mom. An aptitude for cooking is something she definitely passed down to us kids; I want to have the time to really learn about her dishes (and watch/cook with her) back in the kitchen at home.
