Been using this pan for the last couple of months. Mostly eggs and sausage.
It has performed quite well. Heats evenly near as I can tell.
Easy clean up. More comfortable for me then the All Clad.

Not a pizzeria, but Celeste makes it pretty well.
It ain't like home made or Brklyns best, but better than most.

Baking brownies with a silicon sheet

parchment is my go to. I was seeing if anyone had tried the silpat. Removal would be no more difficult that a parchment sling.

I ended up buying a scalloped Hoffritz for $10 at Home Goods or the like. I'm sure it isn't top of the line, but it's nicely weighted and does a nice job on my breads and artisan TomCat types I buy. I'm sure I'll get 5 years out of it, if not more.
The Accusharp does a fine job on my Wustoff with an annual pro job.

And when I have to fridge my bread because the "wear" date is approaching and the bread is a tougher cut from the fridge, the Wustoff does a nice job as well.

Yes, one can argue for much better steel; and I would love to have an custom all tube Hi Fi system in my blue 246 Dino.
But I'm a bit more realistic.

I've been using TJs canola, but have grown tired of it.
Should I stick or are there reasons to go to peanut or grapeseed?

I'm looking for a ss frypan. Don't want non-stick no matter what chemical is on it.
Nothing from China and I'd prefer US made.
That seems to leave me with expensive All-Clad, even from an outlet or 2nd or the Regalware stuff.
The Rware is comfortable in my hand, but I'm curious if anyone has any time experience with them?
It's mostly eggs and an occasional chicken breast. Do they heat evenly and how is the clean up on them?

How to soften butter to room temp when your house is kept cool?

"Put it in the oven with the light on for 10 mins - my oven is around 95-100 degrees when the light is on, which should soften butter up in a hurry."

If you know Trader Joes you know Druid Circles, or should. Chewy oatmeal raisin cookies.
Here's an approximated recipe from elsewhere on the interwebs.

Bowl #1 (Mixer Bowl)

1/2 cup (1 stick) unsalted butter, softened

1/8 cup vegetable oil

1 cup brown sugar, firmly packed

1 egg, beaten

1/4 cup buttermilk, yogurt or soured milk

1 teaspoon vanilla

3/4 cup currants or raisins (plumped in hot water)

1/2 cup chopped walnuts or pecans

1/2 cup (unsweetened) coconut flakes
2 cups old-fashioned rolled oats


Bowl #2:

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon
allspice

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup whole wheat flour

1 cup all-purpose flour

Preheat oven to 350°F.

In a large mixer bowl, cream together the butter, oil and sugar. Add the egg, beating until fluffy, then beat in the buttermilk and vanilla. Stir in the currants or raisins, nuts, coconut and oatmeal.

In a separate bowl, mix together the baking powder, baking soda, cinnamon, nutmeg, salt, and flour. Add this, a 1/2 cup at a time, to the mixing bowl, beating well after each addition. Do not over mix. Let the leavening rest/work for 15 minutes.

Using a tablespoon, drop the batter onto lightly greased cookie sheets. Slightly flatten cookies with an oiled glass. These cookies don’t spread as they bake. Bake the cookies in your preheated oven for 12-14 minutes, or until they’re light brown. Yield 3 dozen 2 1/2- inch cookies.

These are good, but they're missing something in both flavor and chewy. The recipe didn't have allspice Or honey, but the bag list does. I substituted 1/4c of the AP flour with barley malt flour.
If any one has any ideas for a punch up, please ...............

Finally got to Txikito. It was most excellent. Also new to me and very good is Pata Negra on East 12. More towards the pork side of things with an excellent wine choice. Tiny, fun and popular.

Boqueria is too much scene. Casa Mono was very weak and snooty.
We quite enjoyed Mercat on Bond.
