Granola - can molasses be substituted for honey?

The granola I make uses molasses for sweetening. About 1/3 C for 4 C oats, also has a couple tablespoons br sugar & butter along with some water

Rounding on restaurant bills

Tonight after dining at a regional family owned chain we received the incorrect change for our payment. we were missing the actual change . We showed the waitress, she said it was correct, we showed the math and she said "Oh, you want the coins ? We don't bother with that.". She reached in
to her pocket and put whatever there was onto the table and left. We took what was ours. I have never heard of rounding the bill. I first thought the management would make a good bit extra, then thought they may even out over time. Regardless, the patron who is shortchanged loses out. It may be only cents, but hey - its mine ! I sent a note to the owners for an explaination, haven;t heard yet. Is this common in places ?

cognac from the 50's/60's

They've been stored undisturbed, away from light in a dry basement that has a fairly constant temperature. The seals are intact. I'll give it a try and report back.

Concord Grapes

Has anyone seen a good price on Concords ? I saw some at market basket in BUrlington , small box butthey didn;t look like much - didn't notice price. But it made me want to make jelly. thanks

cognac from the 50's/60's

Cleaning out my farther's estate we came upon a number of unopened bottles of liquor that had been purchased on one of the trips my parents took to Bermuda in the late 50's and 60's. I passed on the whiskey and bourbon and missed on the brandy. However, I do have a bottle of Remy Martin and a bottle of Courvoisier. Would these have aged well during that time ? Or does the aging matter only before the bottling ? I assume they are still good drinking. I don't know about cognac. What's a good way to enjoy it ? thank you

Growing up my father would sometimes make a shrimp cocktail with a creamy sauce that he called Lamarze sauce. He said it came from a famous hotel recipe but I was never able to find ant name of the sort. What ever it was , it was very good.

ISO currants (red or black)

I pick at Monadnock Berries in Troy NH each year. Currants are usually ready after july 7th. Beautiful place to pick with view of mt monadnock. I love currants !

Went to Davis sq last week and was disappointed. I realize its early in the season and not to expect much but there was so little. I expect in a couple weeks it will pick up and be as goos as last year.
I read Woburn will be having a market at the old Spence Farm lot on Sundays 9-1.

Growing up, subgum was always diced veggies most often with almonds in it. I have not seen it on menus for years. Back in the day it was our standard order out in central ma !

What kind of peppers are used in making pimento cheese ? Are they regular jarred roasted peppers or pickled of some kind ?

Upton Tea Co sells a decaf Chai Tea with red pepper - very good. Their regular Chai is good too but no heat

Went to this Polish deli on 49th N St Petersburg. Bought some fresh Kielbasa. It was mildly spiced but I did enjoy it. They have a lot of different sausages - all with Polish names ! Some lunches are served (Polish again !) and pierogies - english here - i want to try the plum. Has anyone tried their offerings ? Suggestions for ordering ? Thanks.

Freezing Mac and Cheese

'not creamy' and 'grainy and unpleasant' are not hte same to me I guess. I think the suggestions to freeze uncooked and use a higher ratio of sauce to pasta may be my answer.

In case I'm making it (and much else) for xmas eve and need to do it ahead of time. In other cases it just makes life easier to have some prepped foods for the family. And no - the cheese is not grainy and unpleasant - thank you - when reheated.

When I make mac and cheese I always bake two and freeze one. When reheated, its never as creamy as I'd like - good but not creamy. Should I freeze it unbaked instead ? or maybe make it extra creamy before baking ?

I make the stock first. Freeze it and can make soup easily when I want. I can make a quick soup with leftovers or a more involved soup with fresh chicken cooked in the broth. Having the broth allows me to make a variety of soup flavors.

Smorgasbord - recipes and ideas

My grandmother and her sisters always had lutkfisk ! with their christmas smorgasbord. By the time my mother wa doing the major prep that was gone. Generally there would be numerous forms of smoked fish and herrings, jellied pork and veal, meatballs, ham, baked macaroni and cheese, scalloped potatos, scalloped oysters, hardtack, cheeses, salmon, pickles, more fish and did I mention herring ? spritz cookies and gingersnaps, cardomon bread. Today - all that fish and herring are gone - we've kept the salmon. Always I do the meatballs, jellied pork and veal, spritz and ginger cookies. You should do the jellied pork and veal. Its really good.

Goose Basics

I cooked a goose once and it was wonderful. I remember princking the skin to let the fat drain as it cooked. It was stuffed with fruit, onions and herbs. No stuffing in the goose to eat as it would be too fatty.

Precooked Thanksgiving Dinner

We've been getting our christmas precooked from Roche Bros Supermarket in Burlington for the past three years. It is sure to be less expensive than Wilsons and many others. It's not fancy, but the turkey was very tasty and tender. Sides were good - not gourmet - but good. If you can afford more go for it. If not, this has been a good choice for me.
