Alternative to Vitamix blender

I don't know. Putting ear plugs in every time I use a blender sounds a bit much to me. But I think the noise would definitely be damaging to one's hearing after a while.

Windsor pans or saucers for sauces? I'm confused.

The pan you bought is beautiful. It should be a joy to cook with. Make something wonderful for yourself and be happy. Even better make something wonderful for someone else, and make them happy.

Even though you've lost some important things, you are gaining mastery over a nasty habit that can shorten your life. Congratulations. So, even though losing important things is a hassle, you are gaining something better that what you lost.

I hope the coming week is better for you.

Alternative to Vitamix blender

A big stopper for the Vitamix for me, other than the cost, is noise. Have they somehow dampened the deafening racket these things make?

What would you call the shape of this knife?

I don't think this is a santoku. It doesn't resmembe any santoku I have ever seen. A look at some butchering knives online convinces me that was meant for cutting meat. The angle of the handle would give good leverage as the knife cut through, say ligaments and small bones. I suspect it is a specialty meat cutting knife.

By the way, there is a Jananes knife brand, Caddie. I couldn't find anything online with the name Cadie.

I think the wooden handle may indicate its age.

bare bones pantry meals

I learned to do this from another family. Make pancakes. Add some protein and a piece of fruit if possible.

I forgot this also. If stumped for a meal, you can always start with biscuits. Cream something and ladle fresh split biscuits.

Homemade BBQ Sauce without using Sugar.

Somewhere I think I have one. The base is sugar free ketchup, which it too sweet! But you can add a sour component to sort of neutralize the extreme sweetness. If I find it I'll post it.

But if you like a red barbecue sauce, you can start with sugar free ketchup.

And, making your own is pretty easy.

Also here is a link to some sauces on the netrition site: http://www6.netrition.com/cgi/advanced_search.cgi

NYT: "A Mathematical Challenge to Obesity"

The "danger" lies in exclusive thinking. You can't understand the rise of obesity in the U.S. all by itself. And, the rise in productivity might seem to be a cause in the U.S. but the rise in productivity might not have occurred elsewhere, so it could not be a causative factor. Except (see first sentence) maybe the interrelationships work to exert the same influences on other countries.

I am always suspicious of conclusions about a complex issue that seem to point to a simple or single cause.

NYT: "A Mathematical Challenge to Obesity"

You can't understand a complex problem with a single simplistic finding.

I have read that the agriculture policies of Earl Butz caused more food to be produced more cheaply, and that caused over consumption. I read this probably a decade ago. (Sorry I can't produce a citation or link.) But surely this is only part of the puzzle.

Good recipe for sour blackberries?

Add a bit of half and and half or ice cream.

Do I need these knives?

I find that a longer chef's knife does this job better than a smaller chef's knife. I also find that I get better the more I do it.

Fourteen ounces is the new pound

14 oz is the new pound until the 12 oz package comes out.

Moving kitchen items -- knives, pans, dishes

Ten miles down the road isn't a big deal. I wrap everything in sheets of newspaper. Or you can buy sheets of unprinted newsprint at Lowe's or Home Depot. Use the paper as a wrap and cushion; don't skimp. You need to get boxes of course. Lowe's or Home Depot carries boxes. Lowe's has a better selection. You can buy dish boxes with dividers there.

I'd wrap my knives in kitchen towels and place them in a box so they don't slide around.

I think the cases with squares of foam would keep your good dishes fine for a short trip. You can buy the foam squares at Home Depot, if you need more, by the way.

Me, I'm packing for a long distance, cross country move. I'm mailing kitchen stuff ahead, because I won't be in a house for a couple or three months. I need my kitchen gear.

Good luck on your move.

Hell's Backbone Grill in Boulder, Utah http://hellsbackbonegrill.com/

Those weird things you eat when you are in your kitchen

I used to eat a certain brand of canned tomatoes straight from the can. I can't eat unlimited quantities of tomatoes now, but I still like to grab some of the little cherubs as I'm in the kitchen cooking.

Why do you continue shopping at CostCo? I am underwhelmed. What do you appreciate about the warehouse store?

We buy a few food items there, but for us the paper goods and dishwasher detergent are reasons for visiting. I like having rolls of tp, paper towels and napkins in the house. We have bought electric toothbrush replacement brushes there, and a few other items.

I like the frozen salmon burgers, some of the coffee, the tuna, some of the fresh stuff out of the cold room, and that's about it for food. I won't spend the $ for the large packs of meat. I prefer reduced fat cheese to full fat most of the time. Most of the frozen stuff is too processed for me. So, I don't buy all that much food there. We visit only every other month or so. So its a tossup whether it is worth it.

sugar free cheesecake

Wow, that sounds good!

"Pink Slime " fallout

I think we simply disagree. And the Hardees burger, which I enjoyed for a time when I was doing low, low carb, is worlds better than any McD's I have ever had.

best immersion blender?

I bought a Cuisinart Smart Stick with the separate vessel and attachments, and it works for everything I've done with it, including stir natural peanut butter.

Ok clever cooks! Money/time saving tips on multi-purposing items!

If you have a pressure cooker, you don't need so many saucepans, or even a rice cooker. The PC will do so much for you, and it does so much so well.

"Pink Slime " fallout

I think it is the point. Perhaps, for people on a strict budget, if the ingredients were disclosed, it might have a place. And remember that plenty of fast food places were using this product. Again--not disclosed.

I don't eat commercial hamburgers very often, so my sample size is quite small. But the Hardees thing that uses pure beef (of some sort) is worlds better than the McDonalds hamburger. Could it be that actual pure ground beef tastes better than adulterated beef?

If they want to adulterate ground beef or ground chuck, then they should disclose it, and keep it priced cheap. But that isn't what happened.

Yams vs. Sweet potatoes

Thanks! I really like the yellow ones.

HELP! finally have two nickels to rub together - buying a new range

If you are a subscriber to CU, you will get a detailed questionaire that covers many products. The experiences of many people are compiled to get histories of problems on various brands. I believe you answer how long you have had an appliance, and then disclose if you have had repair issues.

So, there is some info on longevity and service issues.

However, checking CU is only part of the research one should do. I'd start there, personally.

And also, I value the responses I received on CH when I asked about dishwashers. The responses about ranges would be valuable info if I were in the market for a new range.

A Historical Solution to Cast Iron Hotspotting?

Sounds wonderful!

"Pink Slime " fallout

But the ingredients weren't disclosed. I think one reason ground beef has become flavorless, is because of its adulteration with pink slime. Remember that this adulteration was only stopped after whistleblowers at the overseeing government agency called attention to it. And, the former head of the agency went on to a nice job with the meat processors.

I think the whole affair stinks of cronyism.

Yams vs. Sweet potatoes

I love Japanese sweets. Does anyone know if this is a true sweet potato or a yam?

Kitchen Limitation Challenge!

I've recommended this book many times before: The Ultimate Rice Cooker Cookbook : 250 No-Fail Recipes for Pilafs, Risottos, Polenta, Chilis, Soups, Porridges, Puddings and More, from Start to Finish in Your Rice Cooker, by Beth Hensperger and Julie Kaufmann.

You can do amazing things in a rice cooker. I admit that mine is underutilized.

A Historical Solution to Cast Iron Hotspotting?

I was trying to imagine cooking with coal, and found I couldn't.

My father bought his mother a stove at some point, because he couldn't stand the taste of food cooked on a kerosene stove. But I don't remember what sort he bought her. This was probably during the Depression.

I can remember his enumerating the sorts of stoves they had, but I can't remember details!

I think the pan in question looks like what you think it is. I don't know why someone would weld(?) a steel pan to an iron trivet for any other reason. I also am skeptical of how well it works. It is interesting though.

HELP! finally have two nickels to rub together - buying a new range

Nice looking.

Say what?? Cooking comments that baffle you

These people are really mentally ill? ("crazy" isn't a figure of speech?)

OK, then I sort of get it. How do people like that function? My guess is they function poorly.
