I have old cookbooks which I have used for years. Some of them are out of print and some of them tattered and worn out. Craig Clairborne and Pierre Franey still remain. I plan to list my old recipes to Pepperplate from these two books and some of the recipes that I got from the internet. I am now entering the newer recipes into old steno books

Jamming, canning and preserving 2013

I got 2 pounds of blueberries at the supermarket yesterday. Filled a baking tray with the berries to freeze, and this evening I will separate them in rubbermaid containers. No need to wash them now, only with I plan to use them.

You bake the eggplant parm. for 30 minutes.After 20 minutes you drain the liquid from the eggplant with a tablespoon. Return the eggplant to cook an additional 15 minutes.

Eggplant parmesan fail - what am I doing wrong?

I make eggplant parmesean several ways. You find eggplant gets bitter. One way is placing it in the sun. The other is draining it with a dish underneath. I referred to Marcella Hazan method in one of her Italian cookbooks. She mentioned to take tablesoups of liquid from the eggplant during the cooking to remove excess liquid. This prevents the soggyness and the finished product turned out well.

Funny I have the same problem. I am planning to move and the same time the refrigerator stopped working, although the freezer is still working. Bought a small refrigerator for the time being. Hoping to carmelize the rest of the onions or make more onion soup.

Freezing parsley

I bought a bunch of parsley which I usually set in water, cover it with a plastic bag. This last a week and I toss the parsley. I heard that parsley freezes well and I would appreciate knowing how I can save it for later use.

Rump roast?

I did a recipe which I found on Ezra Pound Cake website for pot roast (ina garten recipe). Yes the price for the rump roast was reasonable. After two hours oven baking 160 degrees, I found the meat very tender and there was a lot of gravy. There was a similar recipe on Saveur for the slow cooker.

I have a set of cast iron cookware which I bought in K Mart. It came with two skillets, several pots small and large and a dutch oven. All with lids. Made in Taiwan. Excellet quality and the price was $17.00.

Broccoli Rabe

I tried it for the first time. I planned to make beef and broccoli using broccoli crowns but found that the broccoli rabe was cheaper, I am using fillet mignon which is marinating. The broccoli was made exactly the way you did. The problem is that I used a great deal of garlic in preparing the broccoli rabe and the recipe for the beef and broccoli requires some fresh ginger and scallions, Also, I will have to chop the broccoli in smaller pieces to accomodate the slices of beef, which is sauteed and the entire dish is sprinkled with a seasoning sauce, Let you know how it turns out.

I don't know of any recipe. I believe you can make peanut butter from ground nuts and it may be better then the commercial products.

Looking for introductive suggestions/recipes for Chicken Heart, Liver, Stomach

I always remove the innards from the chicken leaving out the liver and add ingredients used in chicken soup. You can make gravy from the broth. The gizzards can be served with the chicken. The liver can be discarded but if you purchase additional liver you can make chopped liver similar to the barefoot contestas recipe.

Best way to cook rainbow trout?

I dip in milk for 5 minutes, then dredge in seasoned flour and saute it on both sides. Can remove the skin and center bone after cooking.
