Does anyone know where I can buy a high-quality machine to make shaved ice desserts?
The shaved ice desserts are of the types that exists in Taiwan and Korea, and is now popular in Hawaii and can be found at some bubbletea shops in the GTA.

Where to find Creme de Marrons in GTA?
Does anyone know where to buy this? It should be an import product from France.
chestnut cream = crème de marron
This is made with puréed chestnuts, brown sugar, and vanilla. It's used as an ingredient in several desserts, including Mont Blanc. It is dark brown.
And it tastes in creme fraiche!

Anyone have recommendations for the best FROZEN (take home) Xiao Long Bao in the GTA?
I am hoping to find a small specialty shop somewhere that makes it really well. The frozen stuff I've tried from grocery stores are not very good at all.

Meat at T&T, Your Comments?
Yesterday, I just had a Rib Eye from T&T Cherry St. - $5 for about 300 grams of steak. It was a little fatty, but fairly tasty and tender.
Preparation for the ribeye: simple rub-on marinade (a teaspoon of vinegar, a little Bourbon, some spices, and some olive oil), rested meat after rubbing the marinade on to just under room temperature, seared at max temperature on grill-pan, and finished it in oven (broiled, ~4min/side to medium rare).
Two days ago, I also had a 45-day aged angus striploin from Fresh&Wild, cooked in a similar manner (except I used a dry-rub). The aged striploin was excellent, but cost about 36.99/kg. I would say the T&T steak was definitely worth the money.

Cost-wise, DIY is only good if you have a family or larger group of friends... it's not really worth it if you have two people.

i assure u that the real thing is awesome. it definitely tastes MUCH better. the only question is whether it's worth the premium. you are paying for the importing of the stuff.

Iberian Ham Prices: $20 /100grams for leg; $25 /100grams for shoulder at Schefflers.
I think they should still have it if you go early - but hard to say. When i went, it was about 6:45pm, and they had a substantial piece. They told me it literally arrived Friday afternoon, so maybe no one knows yet.
I also bought Parma (18 Month). and I have to say the difference is substantial. The taste is different first of all, and the consistency and texture of the Iberian is much better. The Parma for example still had some stringy-ness - ie i couldn't chew some of it. But no such issue with the Iberian. The meat was perfect, with subtle flavours and delicate nuttiness. The Parma had an almost meaty-livery taste. Of course this could be because it's 18 Month Parma.

i just went to Scheffler's and bought 100g's of IBERIAN ham... they just got it in - first in Toronto... they told me that a number of places should have it by tomorrow.
and I'm about to do a taste test...! mmmmm.

I don't think it was that big of a deal at Cumbrae. my concern was just that it implied an incredibly high grade, since "kobe" is usually known to the public as THE best. Well, I as noted by myself and matt, their Gen 3 product is not yet and not even the best that they could offer.

I understand it takes time to get the marbling, but they should work on promoting it correctly. Putting just "wagyu (kobe)" on their labels is misleading because the beef as it was sold at the time was neither Kobe nor the same grade as Kobe.

I've had a $46 cumbrae wagyu (strip loin) just a month ago. it was good but not great. I don't think it's worth the money as it was not even as marbled as Japan's medium grade wagyus. They also label it as "Wagyu (Kobe)" or something like that, which is totally misleading as their beef is not even close to real Kobe or even just high quality wagyu.
You may wonder how I am qualified to assess this. Well, i've had a substantial amount of japanese wagyu when I spent several summers in tokyo. you can get kobe or matsuzaka (or any one of a number of 'brands' nicely marbled wagyus) right out of a decent grocery store there - at close to the price here for quality beef (and much cheaper than the wagyu at cumbrae).
As I am not a chef or food critic professionally, I can't say that I cooked the meat perfectly, especially since i only have an above average stove. However, i assure you that the marbling was not substantial among all the pieces (there were quite a few) of wagyu at cumbrae, compared to the japanese wagyus i've seen.
I hate to say it, but cumbrae is not a great choice - I'd spend the extra money to get real Kobe - if in fact it is available in toronto; or just buy an outstanding piece of "local" beef.
