What's the better product to remove light surface scratches from the polished stainless steel outside finish of such cookware - BKF or Bon Ami? Someone who didn't know better used an abrasive sponge pad and left a lot of light swirls and scratches. thanks

In search of Hong Kong's 'BEST WON-TON NOODLE'
I recommend you try Ho Hung Kee at 2 Sharp Street in Causeway Bay. It's near the Times Square mall and the Lee Garden Theatre building.
Long established place that many locals love. Great congee, too. (say: Ho Hung Gay)
I'm not a HK local, so I'm probably not the best judge of "best", but they're pretty tasty.
I would have to guess that the perception of "best wonton noodles" has a lot to do with where you grew up, what you're used to, and all the usual subjectivities concerning food. Like - best BBQ in the US? Best fish 'n' chips in London? Best pizza in NYC? Guaranteed to start a lively debate that results in a draw.
Re: broth without meat, bones, etc -- that's not really much of a priority for Chinese chefs. The question asked would be - why would someone want that? The kind of not-quite-vegetarian, seafood-only dietary practices of some people in the US have little currency in HK & greater China. Vegetarian, yes. Halfway? In my experience, it doesn't seem to really register with people.

A note to clarify, unless I missed it above - Tung Po Seafood Restaurant is among the indoor dai pai dongs in the North Point municipal market complex at 99 Java Road in North Point, not actually in Happy Valley. Once you get up there, Robby's place can't be missed, nor can he & his 'do.
For roasted meats, an easier trip than schlepping out to Tai Po is Joy Hing,
265-267 Hennessey Road, Wanchai. Street level, but not actually facing Hennessy Road. It's around the corner from that listed street address, facing Stewart Road. Chaxiubao gives it a good write up.
