Parmesan rinds in soup?

the rind itself is edible as well (after it's been cooked in the soup) can cut it into matchstick-sized pieces and scatter a few on top of each bowl.

Need a use for leeks in my dinner tonight

You've probably already had dinner by now, but you could use the leeks as if they were onions (i. e. gently saute them before you add the rice). Some sage might be a good complement...
