Slow Cooked BBQ Ribs. Not the same?

I tell people this all the time. Snuff out the charcoal and put it in the oven. No one has ever commented on how smoky the aluminum foil tastes.

Baking French Macarons With Aluminum Foil?

We have gone exclusively to using a Silpat. Parchment wrinkles underneath the macs. If you're using convection, it can also blow up off the sheet if it's not held down. Mine come right off the Silpat 5 minutes after they're out of the oven.

Slow Cooked BBQ Ribs. Not the same?

If by "BBQ ribs...similar to what you what you can get from a restaurant or grill" they mean meat that is cooked to a safe temperature with barbecue sauce on them, then that's probably what it makes. There are restaurants out there definitely serving this type of product.

It is, however, a misrepresentation to say that it is the same thing you can get from a grill. Not possible, in the same way you can't achieve this with sous vide.

Depending on your access to even decent barbecue, a primitive palate would easily distinguish between the two.

A quick trip to flame (grill, searzall, etc.) would go a long way in achieving a weak facsimile.

What's for Dinner #349 - the Sub-Zero-For-Some Edition [Old]

In honor of the coldest night to date, I have 48 hour dough ferment going in anticipation of sub-zero temps on Friday the 20th. One pie will be shaved mushroom, the other is a still to be determined. Hopefully it doesn't take too long to get the pizza oven up to 800°.

One day and night in Santa Monica - Where to eat?

A month ago I had exactly one night in Santa Monica, and I spent it at Tar & Roses. Everything is cooked in a CVap and their woodburning oven. A unique experience (in a good way).

Several Oahu restaurant questions

My wife and I have eaten at Alan Wong's many times and have had nothing but top notch, consistent service and food. This isn't an attempt to discredit the previous posters' experiences, but in my opinion, skipping Alan Wong's would be a missed opportunity.

I wholeheartedly agree with the endorsements of both Sushi ii and Izakaya Gaku. Imananas Tei is another favorite of ours. All are great options.

If you are going to Side Street with 2 or 3 people, I would strongly reconsider. The size of each dish is enormous. You will either throw/give away a lot of food, or you will consume 8,000 calories at dinner.

Whatever you end up doing, please report back. I'm always interested in hearing how these stories end.

Maui Here's our homemade guide to places we like

Nice list Phil. I'm sure you've already been, but a few of our other favorites are:

La Tienda Del Sol in Kihei - HITW Mexican that is VERY clean, professional, and authentic. Lunch only.

Flatbread in Paia - there's nothing like the smell of a pizza oven powered by kiawe wood. The Mopsy is a fave of ours.

Baked on Maui in Haiku - great breakfast and lunch items. There is an ever elusive macadamia nut bar that is the stuff of dreams.

MW vs. Alan Wongs?

I was faced with the same question during our trip in January. I don't know how often you go to Hawai'i, but most restaurants don't hit their stride until at least a year.

We saved MW for our trip next year (will be going to Alan Wong's, too). Let us know if what you think if you go.

Help!!! Where are those mid-priced HOME COOKING GREAT Cleveland Ohio Restaurants???

Donte's in Berea 24 oz. GLB Dortmunder draft for under $4, this place used to serve many of the Ford workers back in the day. Just solid food. Really good pizza, too.

Das Scnitzel Haus in Parma. Not crazy ethnic, but again, just solid food.

Conte's Brook Park. Solid Italian food.

Dominic's Santos is a place that flies under the radar in Cleveland dining circles. Just a lovely little neighborhood spot in Fairview Park.

I personally am not a fan of Sokolowski's, but many people in this town are. Please let us know where you end up going and what you think.

All of my recs are within a 20 minute drive of downtown. You'll generally find better value in the west side suburbs.

Aloha Hawaii! Please Critique SF Chowhounds' Visit to Kauai and Maui for Next Week!


From what you have listed (coming from SF) Ka'ana Kitchen might be the only one I'd consider from the first four choices. I am admittedly intrigued by Migrant, but they hadn't opened yet when we were there. I'd definitely hit that.

Amasia - at best you'll get what you pay for. It slides toward the negative from there.

Hali'imale General Store - It's a safe menu, don't expect to have your socks knocked off. It's a pretty dark drive up there at night, too. Again, at best you'll get what you pay for. Portions are ample.

Monkeypod - Some people love this place. I would just as soon drive to Paia and go to Flatbread Company.

Ka'ana Kitchen - like everything in Wailea you're paying over odds for the food. At those levels I'd rather go to Mama's. I will say Andaz is one slick hotel, though. At the very least stop in for some drinks.

Best foie gras dishes on O'ahu

My fave is the "Soup and Sandwich" on the tasting menu at Alan Wong's

Chilled Vine Ripened Hamakua Springs Tomato Soup, Grilled Mozzarella Cheese, Foie Gras, Kalua Pig Sandwich

Even though it's only listed on the tasting menu, they let my wife order one as an app.

Pizza on Oahu's North Shore

Pizza on the North Shore is truly bad. I'm normally not the mean in my assessment, but he (or she) who brings great pizza to Hale'iwa and the surrounding area, will make a tidy sum. Seems almost too simple, doesn't it?

Anyone Try Santouka Ramen Yet?

At noon there was already a decent sized waiting list. Thankfully I was only one. After putzing around in Don Quixote for about a half an hour, I was second on the list. Chairs at the bar are very plush and comfortable. The place is spotless.

I ordered the medium bowl of shoyu. Couldn't go overboard due to the tasting menu that was slated for dinner. Broth was flavorful without being overly rich. Ordered with an aji-tama, it's a solid bowl of noodles. Server was a little slow getting me the check, but overall is was a great experience. I'd definitely go back.

help finding Ivan Ramen ingredients

I'm having one hell of a time sourcing the ingredients for the dashi recipe in Ivan Orkin's "Ivan Ramen" cookbook. This isn't just a case of 'damn, I'm gonna have to go to a few stores or websites to find some of this stuff'. The different dried fish are a PITA to find. Shaved dried mackerel? Shaved dried sardines?

Any online or mail order sources you guys know of?

1 night in town, Barbuzzo or Zahav as a solo diner?

Granted you won't be order the lamb shoulder that feeds 6-8, the small plates at zahav plus the grilled items would give you a nice sampling. The food there is pretty special...not what you'd easily make/find at home. I'd pick Zahav. Fried cauliflower and halloumi are amazing. Plus the laffa bread with tehina hummus. Yum.
