Desert Hot Springs suggestions sought

A couple of local places so you don't have to drive into PS after soaking. Capri is an Italian/steak house, not great decor, had a good burger there and they serve cocktails. Can't vouch for the Italian. Casa Blanca for Mexican is also decent for DHS. On another level, I really enjoy the restaurant at the Desert Hot Springs and Spa motel for breakfast, it gets crowded, but the eggs and trimmings are all cooked to order, and if you are inclined, they serve bloody marys and other imbidings early, and late. All these places are funky, but so is DHS. The natural hot water is divine though.

Near Joshua Tree NP Lunch & Dinner Recommendations

I would think that you could do Christmas dinner at the Mission Inn, in Riverside on your drive back into Orange County. Joshua Tree is remote, and the park wonderful during the winter. Kind of a solitary type experience during Christmas holidays. Pack a fabulous picnic for the day, something hot to drink, as it gets chilly during the winter, then press on back into Palm Springs or Orange county area for a real meal. Pretty ambitious driving, but do able in a day.

Sheppard Mansion, Hanover -- FINALLY!

I'll keep your post for my next visit to the lovely state of Pennsylvania. Just returned from a major road trip, grab bagged a couple of local chip brands, and wondered why they were so yummy. Of course, didn't take notice of the label except for them being local, which in my world, can translate to fresh, and supporting the little guys always helps. Thanks. Now if I could just get my Kielbasy question answered!!

I had some Kielbasy over the Thanksgiving holidays, roasted til black in an oven. My cousin told me it was purchased locally, at a grocery store. Tasted like nothing I have ever had on the West Coast, i.e. Hillshire or something along those lines. She had thrown out the label, but I am thinking they were fresh, not smoked, meat seemed like dark meat pudding, creamy, delicious, not spicy or fatty. Any clue, help or sources for same? Thanks, hounds!

Southwestern Style Thanksgiving Menu Ideas

It was Bon Appetit. I saved the issue, and still use variations on the Southwestern theme. It was a maple syrup/chili powder rub on the turkey, and it was on the cover. Turned out very very good, and really pretty. My favorite from that issue was the Crab/corn souffle that used pasilla chili's. Epicurious carries all the recipes. There was also a cornbread stuffing. I have the issue at home if you need more info and can't find on Epicurious. It was a wonderful spread.

Canned tomatillo query--Chile Verde today

I like to braise the Pork separately, and then drain the fat before adding to the sauce mixture. Canned tomatillos are fine, actually good, maybe a little acidic, so add a teaspoon of sugar to balance. I also saute all the vegetables together, onions, chilis, and then add the spices like cumin and oregano, salt and pepper. Into this sauce add your pork and juice from braising. No need to char tomatillos, but go ahead with the peppers if you are so inclined. Adds another dimension to the stew, but I usually just saute without the charring for that clean green look.

Whipping cream dispenser problem

My dispenser, filled with new heavy whipping cream, a dash of vanilla and a Tablespoon of sugar, once charged, tastes rancid, gassy. Have seriously cleaned the unit, bought new NO2 gas, and still the problem persists. Any thoughts? I have also resorted to just whipping the cream old fashioned style to make sure it wasn't a bad batch of cream. It wasn't. Please help, as I loved the convenience of the ready whipped dispenser, and it held the whipped cream for days. When it was working!

Very good food and drinks. The burgers are some of the best, and the hand cut fries are a work of art. Smallest kitchen I have ever witnessed, but the fry cooks hold their ground and turn out wonderful food, fast. Usually kind of busy, and boisterous, but the owners are always there, and the waitress', bar keeps are on top of the world. Again, great green chili cheeseburgers and cold beer.

SUPER BOWL...What's on your menu

Try a google search for Martha Stewarts Honey Chili Lime Wings, baked in the oven. These are wonderful, I use twice as much Tabasco style juice, lots of extra fresh squeezed lime and zest. An easy to modify to your taste recipe, and cooked right on a sheet pan. The wings are prepped the day before and marinate overnight. Sweet and spicy all at once. I also spinkle with a little course salt when just removed after cooking.

SUPER BOWL...What's on your menu

If you substitute evaporated milk for your regular milk or cream, your dip will have the same consistency of your beloved Rotel/Velveta dip, with real cheese. Also hold for hours without the oily excess from the cream or cheddar separating. Yummy recipe either way though.

Mr. Wolf likes boutique beer, amber ale type pours, and is spoiled by chow type feasts. Will have a car, coming from DelRay Beach area. BarBQue, Fish houses, or burger joints. TIA

two nights in Barstow. Anything chow worthy?

Idle Spurs for steak sandwiches, salads, they have a lunch and dinner steak house menu, can sit at the bar if you are alone. Hwy 58 heading West out of town, kind of convoluted across the Mojave River, but it's decent, nice atmosphere for Barstow. Los Domingos is a family chain of better than good Mexican food, good Chili Verde burritos and Shrimp Rancheros, Chorizo eggs. On another note, Barstow is home to the original Del Taco, and their family, which is still run by the daughter.

Did you catch Alice Waters on 60 Minutes?

I agree completely with the statement that she gets a great deal of publicity, almost every time she speaks. It is the old hippy guard that is allowing this voice, one of complete idealism. Making Sense is really making the most sense of all of this hoopla, the Leslie Stahl idolitry gooshiness. Yes, her ideas have merit. But I know she procurs a lot of food from Chino Ranch in southern California, not locally, cooking food over wood is not very good for the trees or the air we breathe, and Jonathon Waxman of Stars in San Francisco really started California Cuisine. Please continue to make sense, Making Sense. There has been gardeners, integrated pest managers, local food, wild food, home cooks, restaurant masters, putting food by, without all the psuedo celebrity publicity that AW seeks and stuffs down our throats. Read her menus, they are not so local, or seasonal every minute of every day. They are the best of what she can procur, whether it is lobsters from her Maine connection, or tomatos from Chino Ranch near San Diego, many many miles from Chez Panisse.

Evergreen CO restaurants?

Evergreen is not a destination dining spot, but the scenery and mountain air will keep you coming back. Yes, the El Rancho is one of the better spots, mountain log cabin and been around forever. Try Keys on the Green, upper Bear Creek, golf course clubhouse, not great, but again, log cabin, outdoor dining or fireside tablecloth. Neat building right on Bear Creek. The Wolf house for breakfast in town if it's still there. I would also give the Little Bear a go if you are brave enough for a renowned bar, usually music and dancing. Gets loud and can be fun. Major bands have played there in it's heyday, can get packed and rowdy.

Amish Friendship Bread-- Omit Pudding?

Omit the pudding and add smashed bananas, or applesauce. I also substituted white whole wheat flour, and added pecans and lots less sugar to the finished bread. I think to redo the starter though, you should stick to the white flour and sugar. It's basically a quick bread base, so be free to add goodies, dried cranberries, nuts, oatmeal. The base I got was yeast free. I don't know if the changes maintain it's Amish friendship bread status though.

Great Grub arond Ontario?

Head north toward the mountains on Haven, then right on Foothill to the Victoria Mall or Center. Great shopping but there are tons of chains like PFChangs, a Kings Fish House and then a new Bass Outdoor Shopping Complex with some seafood venue. Also under the 15 freeway on the other side, which is East Foothill is an In n' Out burger, and a ClaimJumper. North of the Victoria Center Mall is a Henry's Heath Food, which is owned by Wild Oats and you can pick up healthy snacks for your hotel room. Sorry I don't know the names of the roads better.

staying at Red Rock Casino - good foood around the area

Try Nora's on Rampart, down the street from RR. It's in a corner location next to a Williams Sonoma. Very good Italian, just had a bridal shower luncheon with about 16 woman and the service with wine was excellent. The proscutto is flown in from Italy whole, that with the fig butter was really good. The rest of the menu is just that, really good, not amazingly great. Crepe style lasagna very rich, baked penne and the like. Attempts to be authentic Italian. This is a good white table cloth place for a gaggle of girls where you can laugh out loud and have fun. Seems to me that Red Rocks was right around the corner up the street. Open for lunch and dinner service.

Try the Berkshire Pork quarter pig if you really want to have a freezer full of amazing cuts of pork. It was like a challenge to decide how best to cook the cryopacked items, and an amazing treat to eat, each and every one. Their turkeys are also really wonderful. I have sent the hams as gifts to foodie friends, always on time, to lots of accolades about how rich and old world tasting the hams were. I love this company.

need pretty pear dessert recipe

I made Ina's Pear Clafouti last weekend, with a little overripe pears, using orange controu(sp.?) and orange zest instead of lemons. It was amazingly simple to do, very pretty and yummy. Holds well in refrigerator, we had it for leftovers second day with a minute heating in the microwave. Doll it up with ice cream, but it's made with cream so that's overkill. A little mint sprig is all it needs for company.

Help tonight's menu - dish to go with long-cooked pork shoulder

Steamed brocolli and macaroni and cheese, along with a dollop of homemade applesauce and cornbread. Actually any green vegetable, but the brocolli is yummy next to the creamy cheese goo.

Beer for brisket?

Go with the Newcastle. I usually keep Guiness stout in the box for just such a recipe, like the dark rich broth it produces. Be sure though to add more water to your brisket if the beer steams off, as the sugar will burn and make everything charcoal if you're braising for a long time.

Local Butcher - Where to Buy Berkshire / Kurobuta Pork?

The easiest is to order online from Heritage Foods. I have a quarter pig in the freezer, nice loins, chops and roasts, also sausage, bacon and scraps. The berkshire pig averages around 10.00 a pound, including shipping if you have the space. Everything has been superb, it is old style pork, fat cap and all. They also carry hams, fresh roasts alone, and other singular cuts.
