I'm not sure what ethnicity it is. The base of the recipe, minus the cononut milk and beans is from Mollie Katzen's Enchanted Broccoli Garden. I think of it as Thai.

Spicy Coconut Peanut Sauce Recipe

I've made this a few times and it's quite delicious over vegetables and rice

One can light coconut milk
equal amount of water
1 cup peanut butter (or more if you'd like)
4 tablespoons soy sauce
1 can canellini (or other type of bean) beans drained & mashed
curry powder (to taste)
red pepper flakes (to taste)

Heat these ingredients up. I don't really measure, I just add to taste. The beans add a wonderful earthy base note to the recipe. We enjoyed this sauce over tofu, mushrooms, zucchini, potatoes, and spinach last night.

Recipes for starving college students?

My mom gave me a rice cooker when I was in college, it made it impossible for me to screw up the rice.
Quesadillas with salsa are easy protein.
Reheatable gyoza from Trader Joe's are very tasty.
Cereal. More cereal. Instant oatmeal. Cereal.
Premade pasta sauces are getting better and better. They can buy some real parmesan to make the pasta more tasty.

Married To A Non-Foodie, How To Cope?

Maybe you can cook a large quantity of food that your husband will like one day a week. Perhaps a sauce or soup...then cook things you will particularly enjoy as the week progresses..that way your needs to have more variety are met and his needs to have safe foods are met. Perhaps he could even pitch in and do his own cooking every other week...

restaurant suggestions in San Antonio?

I'm headed to San Antonio for three nights on a business trip. Last time I was there I only ate on the River Walk. I'm looking for restaurant suggestions that veer away from being such tourist traps. I'm hoping for a more authentic San Antonio experience....any suggestions? I'd particularly like suggestions for dinners in the $40 and below price range. Thanks!

favorite Meyer lemon recipes

We have a prolific Meyer lemon tree in the backyard. I make lemonaid and freeze ice cubes of lemon juice. I even trade lemons at the Pheonix Pastaficio for fresh pasta and bread (so lucky!!!). I'm wondering what your favorite recipe with Meyers is. Thanks!

Your week of easy dinner meals please

I'm trying to go to the grocery store once a week, no more. I'd love to hear suggestions about how to make this manageable. I've also been a little dry on easy (1/2 hour prep & cooking goal) meals to make after work.

Things we've been making recently include:
baked fish, garden salads, fresh pasta with mushroom sauce, pasta with ground beef and veggie sauce, veggie & noodles with spicy peanut sauce.

Our meals are usually heavier on the veggies and lighter on the meats & fish.

Gourmet camping trip food suggestions?

This is not a camping trip where typical camping fare will be eaten. It's a semi-annual gourmet food extravaganza where people bring food to impress. The goal is to bring food that can be carried in relatively easily, be cooked (or reheated) in an outdoor camping setting, and be phenominally tasty. Last year there was sushi (kind of cheating since one expectation is that food will actually be cooked on the trip), chicken tikka masala, ratatouille, thai spring rolls, lemon pancakes, and creme brulee. You haven't been camping until you've cooked your dessert with a blow torch.

Any suggestions for a dinner meal that would satisfy the above requirements?
