Making cheese at home ... help me get started!

Hello everyone!

I want to start making some cheeses at home -- does anyone have any suggestions of good websites / cookbooks to check out to familiarize myself with the process before getting started? Also, any suggestions on places to purchase starters online?

I bought the pistachio paste at Sahadi's in Brooklyn, but like Kalustyans, it isn't on their website. My guess would be that you could find it at Middle Eastern groceries or specialty food stores...?

I bought an entire can of pistchio paste to make French macarons this past weekend (delicious!). But I used two tablespoons of the pistachio paste and I've no idea what to do with the rest!

Does anyone have any recipe ideas? And in terms of storage, I put the paste in a ziplock in the fridge -- does anyone know if that's the best idea and / or how long the stuff will keep?

Freezing soups with pureed tofu

I made a carrot ginger soup the other night, and added pureed soft tofu to the broth to thicken in up and add some protein. The soup turned out wonderfully, but I'm wondering what will happen if I freeze it -- has anyone had any experience freezing soups with tofu added to them?

Does anyone know of any u pick apple orchards that are accessible by public transportation? Or is it a pipe dream to think that I can get to a farm without a car?
