Saltpeter - where can i get it in SD?

I am making a Jacque & Julia country pate recipe which calls for the preservative saltpeter. I have not been able to locate it. Anyone seen it at any of the markets in town?

ISO Champagne Jelly in SD

Does anyone know where I can buy champagne jelly in San Diego. I know I can make it pretty easily, but am looking for shortcuts and don't want to hasssle with sterilizing jars, etc. Any leads appreciated, as always.

Garlic Confit - uses?

I asked the same thing (as featured in Bon Appetit 1/08), and ended up here. Looked further on the web and found use in complex saffron mussel dish/mussel soup at http://splendidtable.publicradio.org/.... The advantage, besides having on hand, is that when you have short cook time (like fish/less than an hour) where garlic would not ordinarily get done enough, the garlic will be ready to eat.

I picked up the large Chinese single-clove garlics at Trader Joes and am going to try confitting them.

The way we go thru garlic here, i'm going to pick up a jar of pre-peeled garlics and try those too.

Signed, tired of peeling garlic every time i cook.

Bristol Farms, La Jolla

You missed the Fish - an extraordinary selection. Regularly carrying Opah one of my personal favs; the scallops were a thing of absolute beauty. Prices comparable to Whole Foods - pricey for quality. Yes the fresh ahi poke (spiced and plain) were both awesome (a word i despise using as it is overused and therefore abused). The squid and octupus seafood salads were also wonderful (i thought the seafood salads were better than Whole Foods'). The jam/jelly/preserve section was also extensive. I went to Bristol Farms in quest of a good savory crepe, but the crepe stand was temporarily down, while the store did some renovations. So i will have a good excuse to go back.

Looking for San Francisco favorites in San Diego: rillette, dill bread, Thuringer and garlic sausages

By the by - that Delice brand duck rillette actually tasted very good once it came to room temperature and had some time to air and the flavors opened up. I also found a Trois du Cuchon brand duck/pork rillette at Bristol Farms, along with some garlic sausages (tho they are not the same dense precooked style I am looking for), which I have yet to try.

Where to find foie gras in SD??

Bristol Farms (on Genessee across from UTC where old Albertson's used to be) has "Foi Gras en bloc" (looks like foie gras pate in terrine) for $41. Now what do you do with it besides slice it up on crackers/bread?

Does anyone know who carries the "Spice Shoppe" brand of extracts and flavorings in San Diego, or other source of Maple extract? I am specifically looking for a real maple extract, and know they make a variety.

Thanks for the input so far. Whole Foods has thuringer, but it is just not as good as other versions have had - dry; may be too old. Tried the Delice duck rillette available at Whole Foods; not as good as Henri & Marcel's. Still in quest.

Difference between Izakaya and sozai style of Japanese food? [San Diego]

Is there a difference between "Izakaya" (as used in SD) and "sozai" (as used in SF) style of Japanese tapas? Beside Izakaya (on Convoy) and Yu Me Ya (in Encinitas), are there any other Japanese restaurants recommended for this type of fare?

Where to find culantro in San Diego?

Has anyone seen culantro in SD. I didn't see it at 99RANCH unless i missed translation.

No, it's not cilantro misspelled, but closely related. Culantro AKA Mexican coriander, Recao, Ngò gai (Vietnam), Sawtooth, etc.
Used in Puerto Rican and Vietnamese recipes.

I came up on Marcel & Henri’s Rillette de canard (duck rillette) in San Francisco. Is there any good fresh (not canned) rillette (pork or duck) available in San Diego? What about a real good and garlicky garlic sausage (NOT the precooked kind)? I’ve also been looking for Thuringer sausage?

I miss the Cottage Cheese Dill bread from Tasajara. I called around, but no one knows of any. I can bake it, but too much work for bread. I long for a high in Omega3 salmon or mackerel patty on toasted dill bread sandwich. Anyone know of a good dill bread to be bought?

San Diego restaurants are bad

Ba Ren on Diane? Yeah, what a jewel. We (gringos) went with a young man who could read some asian and was able to navigate the menu better than us, and what a treat. I also love their "salad bar." I don't want to know what it is; i just point and enjoy. Jasmine's has wonderful dim sum.

BEST GARLIC SAUSAGE

When I lived in San Francisco years ago, I would buy the BEST Garlic Sausage from the Viglizzo meat counter in Tower Market on Portola (NOT the precooked type/NOT prepackaged). I have never been able to find anything comparable since. I called the market, and they don’t seem to carry this sausage anymore nor was anyone able to help identify it. Does anyone know who made this delicious Garlic Sausage, or where I can find it?
