Do Microwaves Kill the Nutrients in Food?

Several years ago we were told eggs were not good for us. Now we are advised we can eat several eggs a week and the eggs are "good" for us. It appears we are told one thing and told another when more research is accomplished. My Mother lived to 97, ate the fat of the ham. seldom ate beef and so on. We were also told a flat out statement that surface cooking veggies was better for us than nuking the veggies. To spare my brain more confusion I will do as I like but, indeed, nuking water for beverages is a no no for me. You all do as you like!

How to Get the Most Out of Saffron

"Back in the day" my mother used saffron in many dishes. Because of the expense she tried to grow saffron and 1X was enough! Each tiny piece of saffron is culled from the center of a flower(stigma)and painstakingly picked by hand. After this attempt she appreciared paying for this pricey seasoning. But never, never try the lesser quality saffron. Only the top quality will do.

Oven-Fried Buttermilk Chicken

Well, sorry, I agree with madeliner. How about letting the skin on? There is also another way to "oven fry" chicken w/skin on: Mix needed amount of bread crumbs with desired seasoning, add enough veg oil to make mixture cornmeal size, dip chicken in water sprinkling off excess, roll in bread crumbs, place on non-stick jelly role pan leaving space between each peice (I use non-stick foil), bake at 375 degrees for about 45 minutes. Your own shake-n-bake but no sugar. Did I post this before???

Chanterelles and Other Seasonal Mushrooms

As a pre-teen and early teen friends had a cabin in the woods here in Pennsylvania. The lady of the cabin would take us mushroom hunting. We never had a kit and we never picked poison mushrooms. She directed us to look for the mushrooms that looked like small pine trees and pick only those. These mushrooms were usually found under a tree if i recall correctly. We would then return to the cabin and cook them. How delicious was that! To us these mushrooms were better than truffles. :-)

Rice Pilaf

I have been making rice pilaf for years. One can add mushrooms, sauted, green pepper, etc. It can also be baked in the oven at 375 degrees for about 45 minutes covered. A great add to any meal.

Spaghetti and Meatballs

Years ago my friends and I hung out at a bar that featured folk singers. The owner would serve us spaghetti with red sauce and meatballs. He would use fennel in his sauce. What a nice touch. I have always been leary of adding it to my sauce but will def try these meat balls. I also cook my sauce with Italian sausage and meat balls.

Why Cast Iron Isn't 100% Awesome

Heavy! To pour off brownings and carry to sink? Wow! But my iron skillets are over 100 years old and I coontinue to use them. Watching browning foods is a must. I shift the pieces around 'till all are evenly brown. Sure, the skillets CHOW mentiions wojld be great but I cannot in my conscious spend the extra dollars. Bet there are a lot of cooks out there who would not trade their irons for anything.

I have a very old chocolate cake recipe that uses chicken fat for the shortening. It is very delicious but due to everyone being calorie conscious I have not made it in a long time. I use the roast drippings (fat) to fry chicken. The juices have water added, frozen and used for stock.

Wrap celery in foil. It keeps for weeks. I chop off leaves, wrap it in foil, and return it to the bag it came in. I do not purchase celery heatts for these do not keep that well no matter what.

Cooking a poultry carcass is the biggest waste of time. As a young bride I was all up to being super cook and cooked the dang thing. What a waste of time. I even called my Mom long distance and she laughed: "I could have told you that". Better go out and just purchase a fowl and you wil not have foul broth but a delicious liquid base for whatever you want to make.

Seasoning Cast Iron Pans

An iron fring pan can be reconditioned and rust removed by a ssandblasting company. To wash, w/o detergent,use a dish brush and wipe inside with a paper towel to ascertain all food residue is removed. I seasoned an old, mis-used pan with vegetable oil and heat it on high on a gas stove. Works perfectly.

Actyallky, the green ends are delicious in fried potatoes replacing onions. Also good if sauted gently and added to a scrambled egg or omlet. Of course, these greens should be fairly young.

Why Does Ketchup on a Hot Dog Piss People Off?

KM, Mayo on a hot dog is terrible. As is ketchup. Only a good yellow mustard, onions and relish and, 1X/year, sauerkraut.
