I recently dined at a nationally known upscale steakhouse. A diner in our group ordered a filet of beef. It was a good-sized filet wrapped in a single bacon slice set in the middle of a large plate...$40.00.
Now, there's an example of substantial profit margin.

canned potatoes - anyone cook with them?

That sounds wonderful. Don't the hot potatoes wilt the mesclun too much? I think I might let them cool a bit. I had this same salad in a French restaurant in Napa Valley, but they used smoked trout rather than sardines. Love sardines and they're easier to find.

Help! Intimate Rooftop Dinner Party Featuring Grilled Chicken?

If you're worried about the wine, I'd go with a pinot noir, more versatile and easier on the budget than a cab.
You didn't mention how many you would be serving. Have you considered flank steaks on the grill? They're fast-cooking and tasty if sliced thinly with an interesting sauce or maybe a Korean marinade.

Try this one:
Fritos Bean Dip mixed with Homemade Chili. It's the chili in the squatty round jar. It's a bit sweet and goes nicely with the slightly spicy bean dip.

Brazilian Foods for World Cup Party?

Wood fired BBQ'd meat chunks (beef, lamb, chicken) on huge swords. It's the hamburger (signature dish) in Brazil. I didn't taste any marinade or sauce on them. I think well salted and then cooked.
You could use individual skewers to serve your guests. A black bean side sounds great. A green salad with a simple vinegar, salt and olive oil dressing.
Your flan sounds wonderful and you can make it ahead.

There's a Dickey's BBQ in Olympia, WA. They do cater. You could do the apps and have them to dinner.
Maybe check around with some of the locals to get their opinion on the food at Dickey's.

Yes, shrimp cocktail. I took this to a party of 16 this week. I served it chilled in a large pottery bowl with very small Dixie cups and plastic forks alongside. It was very well received and simple to do.

The owner/chef was Don Fernando. They are still using his name, but I don't know if he is actually there.

Oh, you beat me to it. Shish kebob is the way to go. Perhaps these could be plated over or around a mixed green salad dressed in lemon and olive oil.

Another point I'm not sure was made here because due to length of thread, I read randomly.
If one brought in a white to accompany first course and a red to accompany the main, that would necessitate 2 rounds of glasses and 2 openings. The magnum, 1 opening and 1 round of glasses.
