Quick and easy

Basic, Quick Chicken
Lay raw thinly sliced or pounded boneless, skinless breasts in baking dish.
Cover with thin slices of Swiss cheese
In a side bowl mix:
1 can Campbells chicken soup
1 can cheap white wine
Marinated artichoke hearts, quarted
1 can water chestnuts, sliced
Fresh mushrooms quartered
Pour mixture over chicken and cheese
Cover with dry, seasoned dressing mix like Mrs Culberson's
Pour melted butter over all and bake 350 for about an hour.

Shrimp (salad size) cocktails (bring plastic spoons, sm paper cups)
Peal and eat med size shrimp (on ice) different dips
Smoked oysters (in cans) with toothpicks & crackers
Caprese on a stick
I like the pickling idea; asparagus, green beans on & on

Jeff, I understand Gallo's has a sister restaurant called Capo's, Nees/Palm. I wonder if you've tried it or maybe you're fed up with Gallo?
I misss Guilia's! I do enjoy Parma, but you need to bring a full wallet.
Have you been following Cracked Pepper? I heard it's open on Palm/Herndon, dinner only.

Excellent! I've had this while living in the South. It was served on a table covered with newspapers...a fun party-atmosphere dinner. Don't forget lots of napkins and make sure you have a can of Old Bay to sprinkle into the cooking mix.

Does anyone still get the whole family together for Sunday dinner?

My SIL and I lost our husbands within months of each other. Sundays were really bummer days (daze). We decided to do something about Sundays, so we got together for Bloody Marys and lunch, trading off houses each Sunday. At first is was a commiserating Sunday, but now we solve family problems and issues of national interest. So, be at ease, each Sunday we come up with *the* answers....and today (Sun) will be no different.
BTW, we do try out special recipes each week.

I recently dined at a nationally known upscale steakhouse. A diner in our group ordered a filet of beef. It was a good-sized filet wrapped in a single bacon slice set in the middle of a large plate...$40.00.
Now, there's an example of substantial profit margin.

That sounds wonderful. Don't the hot potatoes wilt the mesclun too much? I think I might let them cool a bit. I had this same salad in a French restaurant in Napa Valley, but they used smoked trout rather than sardines. Love sardines and they're easier to find.

If you're worried about the wine, I'd go with a pinot noir, more versatile and easier on the budget than a cab.
You didn't mention how many you would be serving. Have you considered flank steaks on the grill? They're fast-cooking and tasty if sliced thinly with an interesting sauce or maybe a Korean marinade.

Try this one:
Fritos Bean Dip mixed with Homemade Chili. It's the chili in the squatty round jar. It's a bit sweet and goes nicely with the slightly spicy bean dip.
