Cooking for One: A Widow's Challenge

jpr, is it possible to get together with some "alone" friends, go to a movie and then out to eat together? If not, then I'd go to the movies alone, pick up some take-out from a favorite place and eat in front of the TV.
If you want to spend the day cooking, then; small turkey, short ribs, pot roast...something that will make your home smell nice and taste good with leftovers.

Puffin,that sounds like the best method. Mine have always been dry. I think a couple slices of bacon draped over the breast will help and add a pleasant flavor too.

What to marinade my chicken in (Mexican recipe)

I cook 1/2 breasts of chicken (bone in, skin on) in chunked onion and celery. I sprinkle in a pkg of taco mix and simmer until chicken is falling apart. I drain all but a bit of the liquid, debone, "deskin" and shred chicken. Sprinkle another 1/2 pkg or so of taco mix and stir together. I let sit in fridge until I'm ready to put together tacos, enchiladas or tostados. I reheat gently.
I haven't checked, but I think the seasonings mentioned are in the mix pkgs.

Quick and easy

Basic, Quick Chicken
Lay raw thinly sliced or pounded boneless, skinless breasts in baking dish.
Cover with thin slices of Swiss cheese
In a side bowl mix:
1 can Campbells chicken soup
1 can cheap white wine
Marinated artichoke hearts, quarted
1 can water chestnuts, sliced
Fresh mushrooms quartered
Pour mixture over chicken and cheese
Cover with dry, seasoned dressing mix like Mrs Culberson's
Pour melted butter over all and bake 350 for about an hour.

Jeff, I understand Gallo's has a sister restaurant called Capo's, Nees/Palm. I wonder if you've tried it or maybe you're fed up with Gallo?
I misss Guilia's! I do enjoy Parma, but you need to bring a full wallet.

Excellent! I've had this while living in the South. It was served on a table covered with newspapers...a fun party-atmosphere dinner. Don't forget lots of napkins and make sure you have a can of Old Bay to sprinkle into the cooking mix.
