You might want to consider the Farnsworth House in Bordentown http://www.thefarnsworthhouse.com/ . We had an excellent meal there about a week ago. Although I haven't been up there, I believe they have a separate dining room on the second floor that could accomodate your party. They also have a separate banquet menu.

Pizza Help

Tom246 is right. The Hudson street location closed about a month ago. If RC has the time and inclination, he might want to go into Trenton and try Papa's on Chambers St. It's the oldest, continuously open, Tomato Pie or Pizza place in the country. It also has a style pie more akin to what RC probably had in Brooklyn and many people think it is superior to Delorenzo’s.

My personal choice would be to continue down Rt. 33 to JoJo’s located at 5 points.

Old Homestead in AC closing?

My wife and I had dinner there on 10/10/11 and they were pretty crowded for 6:30 PM on a Monday night.

They did have a problem with the Borgata reservations phone line indicating that they were closed during the week and open only on the weekend. This was not the case. If you have a problem I'd call their NY city place but I think they fixed the problem.

I'm with you. They have the best steak I've ever had anywhere and they're also consistent and dead same every time.

Need Restaurant Recs Between Hamilton and Howell/Freehold

This is a tough one as Great Adventure seems to be about half way and there isn’t much nearby.

The only places that I can think of are the Happy Apple Inn in Imlaystown http://happyappleinn.com/ and the Clarksburg Inn http://clarksburginn.net/ . The Happy Apple Inn is pretty good but I haven’t been there in quite a while. I’ve only had burgers at the Clarksburg Inn but I recall that they were excellent. Both places are in the boondocks so I would definitely make sure that if you weren’t familiar with the area you had a GPS in the car.

Glass cook tops

My wife and I discovered a number of cracks in our glass top stove one morning. They appeared to radiate from one location. It looked as if something, like a can, had dropped on the stovetop from the cabinet above it. Yet, neither one of us observed anything like that or any other physical action that could have caused the damage.

This remained a mystery for quite a while until one night my wife was watching the “Kate plus Eight” show or whatever it was called, the reality show about the couple with eight kids. Apparently, the same thing happened to her but in her case the whole top shattered.

It seems that if you take a hot lid off of a pot of boiling liquid and place it on the stovetop, when it cools the moist air will contract and form a vacuum powerful enough to crack the glass. I had noticed this vacuum effect before but didn’t think anything of it. Boy was I wrong.

So, keep your hot, moist lids off of the stovetop and you shouldn’t have any problems with cracking glass.

paulj’s correct. I should have pointed out that it is an enameled pot. The black surface shown on the lid is some sort of primer or undercoat. It’s not bare iron, so I don’t think rust is an issue.

I think Chemicalkinetics might be on to something. Making the lid rest on the three cleats assures that it won’t wobble when placed on the pot. This would compensate for a slight concave or convex surface of the lid bottom rim, the pot upper rim, or both due to the imprecise nature of the casting process.

Three is a key number. If there were four cleats, you could get a condition where only two of them touched the pot’s rim and the lid would wobble around their axis like a chair with one short leg. Three legged stools never wobble and can’t because of the design. The seat may not be parallel to the surface the stool is resting on, but it won’t wobble.

Lodge Dutch Oven

A year or so ago I bought a Lodge 6 quart Dutch Over. It’s a great pot and I’ve been very happy with it.

However, I’m curious about one of its features. There are 3 rectangular “bumps” or cleats on the bottom of the lid where it touches the upper edge of the pot. They are spaced 120 degrees apart around the circumference of the lid (see photo). There obvious purpose is to lift the lid off the pot allowing a gap between the lid and pot.

It would seem to me that you would want to seal the lid as tightly as possible to the pot to avoid the built up steam from escaping rather than condensing on the bottom of the lid and dripping back into the pot. In fact, a lot of recipes recommend placing a sheet of aluminum foil between the lid and pot to ensure a tight seal.

This design feature seems to ensure that the steam will in fact escape. Is this a safety feature to avoid an ad hoc pressure cooker or is there some other reason for it.

I contacted Lodge and asked them but never received a reply.

Pumpernickel flour

Charles Van Over in his book, “The Best Bread Ever”, states that, “Rye meal is sold according to the grind – fine, medium or course. What is known as pumpernickel flour is actually a course grind rye meal available in health food stores and in mail-order catalogs.”

Most pumpernickel recipes use a combination of unbleached bread and rye flour. Cocoa powder and caramel coloring are added to give the bread its distinctive dark brown color.

Depending upon which bridge you cross, the High Street Grill in Mount Holly might be closer to half way than Princeton or Hopewell and they have excellent food. See http://www.highstreetgrill.net .

I'm sure there must be a couple of good places in Marlton or Medford but I'm not that familiar with either town.
