Chef headed to Miami need good eats??!

We did decide on Michys because everyone i spoke to said it is a must do!! so we are in.. also decided on pubbelly gastropub for cocktails and dinner another night. we are still making up our minds on our last night for dinner.

for lunch we think we are going to head to lil havana and find somewhere interesting. we like the market idea where we can eat out side so that may be a great option, and the lincoln road lunch option is a definate bc we are headed there one day to walk around a people watch.

does any one have a strong like or dislike to Red Light ?

thank you everyone

Chef headed to Miami need good eats??!

Hi Everyone,

My wife and I are headed to Miami and I need some help with some real foodie options.

We are staying in south beach for 3 nights, and I will have a car so we can drive anywhere.

I was looking for a great Cuban restaurant for lunch one day and we would like to head into little Havana for a bit, so maybe something there? I will take anyone advice but I really don't want to eat at a tourist trap, looking for something real cuban wise!

Also need some help with dinner options. I was thinking DB Bistro one night but , I have eaten in his restaurants before and I have never been disappointed. Not Really interested in michys, menu looked ok, but if i should go i will.

Thank you to everyone in advance.

Chef Billy

Is it weird to drink Champagne by oneself?

We, my wife and I drink champagne 2,3,4 times a week, Champagne is not just for special occasions. Drink it, Sip it, Enjoy it. If the food calls for Champagne, pop a bottle!!!!

Hello everyone,

read some reveiws heres what I think

1. Bartender could of been a little faster, and maybe a little more talkitive, seemed like we were bothering him

2. Ordered food at the bar, cool I can sit here and eat to, well I guess I can if the food ever comes, it took forever for an order of calamari ( deep fried) and bruschetta ( chopped and tossed) how long could this take you ask ,try over 15-20 minutes, what were they doing catching the fish and picking the tomatoes? any way, food comes Calamari out of this world, best I have had in along time , bruschetta same very good high garliccontents crunchy bread, good olive oil.

3. they clear the table, my wife and i have the pork sandwich with broccoli robe,, she gets mild prov, I get sharp prov side of long hots, our friend orders pizza. wife loves hers, friends loves hers, I dont like greek pizza so I never tried but they liked, ok, my sand very heavy on salt, no long hots on side, some one on here said that it was the best outside o philly, that person should smack themselves on the head.

4. overall food took a very long time it was ok, not in a rush to go back.

Does the cook get offended when food comes back uneaten?

Hi I run a kitchen a golf club, when I see a whole plate of food come back I always ask the server to check w the customer if everything is alright, sometime I will come out to speak w you just to make sure. most of the time its just to much food, and no I dont get upset, in todays world people are eating smaller portions anyway, if you did not like the dish you should tell your server what it was that you did not like (please do it nicely) as a chef you have to be open for your customers opinion whether good or bad or you will never make it.

Knives, kitchen, steak, Need advice.

Sonny, I have worked in kitchens for over 19 years , Im an executive chef ,my first knife was a wustof, I have a whole set at work and a whole set at home. people will disagree with me, but germans know knives, PERIOD. Buy a small set to get you started, and check out justknives101.com, they always have sales. as for steak knives any thing from langouliue france ( i think that this is the wrong spelling ) they are the best by far and I think that williams sonoma sells them but they are over priced there.

also go into the stor ebc depending on you rhand size , you want something that fits in your hand comfortably. Good Luck

Buy a wooden board, season it, clean by hand , you will not be disappointed, it will last forever, you will thank us later. plus if you cook hard it feels better when sliceing dicing or chopping , trust me .

Did I really buy an omelette pan?

French omlettes are oval, in america we make round omlettes, no different, you dont need any special pan, all you really need to make a decent omlette is a 6 inch round non stick pan. you can get one at a local retaurant supply for about $8.00

is there a dishwasher brand you can NOT go wrong with??

HI mark , BUY A BOSCH! I bought one when I moved into my house, 4 years ago and two years ago I did a complete rehab of my kitchen and kept the dishwasher. its awesome never had a problem , its so quite you dont even know its on. I cook hard at home its my test kitchen and I love the dishwasher, would recommend to you. shop around get a good price and if there is a sears near you go there with a lower price and not only will they match your price, but they gave me 10% off look into that .
