Help with Julia Child's potato and onion soup

I have not seen this recipe, but possible solutions could be to cut the onions very small so they cook faster, or to cook them first and add your cut up potatoes later. This sounds like a version of Vichyssoise made with leeks and potatoes, where they are just boiled but not sauteed first. The quality of your stock also makes a big difference to the taste.

Westchester Outdoor Dining

The Chart House has a great location but I have been refused outside table service (i.e. to eat and not just have a drink) in the middle of the week several times, and had to go elsewhere. Other good places are Henry's on the Hudson in Peekskill (in the Peekskill Motor Inn - don't be put off by the address - the food is good) with an outdoor deck overlooking the river and Eduardo's in Mt. Kisco - yes it's on the sidewalk but the atmosphere is a trattoria in Rome. The Washington Irving Boat Club - next door to Sunset Cove - is self serve cheap eats (burgers etc.) and drinks right by the river. It's busy on a warm night.
