Cast iron worse than high maintenance girlfriend!

I've had my cast iron pan for several years and I adore it. I'm not sure if my care techniques are typical but here is how I care for mine. When I'm using it I'm sure to put up a kettle of water so it's nice and hot by the time I'm ready to clean the pan. I empty the pan and fill it with the HOT water and simmer. I gently remove any debris with a silicone spatula. It there is stubborn debris I use some salt. Then I carefully drain the water out of the pan and return it to the heat where I pour in a small bit of veg/canola oil and swirl around to coat all interior surfaces. if there is excess oil, I carefully remove it with a paper towel.

Do you have a French press you could bring along? I despise instant coffee but tried a sample of Starbucks via and found it ok and better than what's out there

Adventurous kids and forbidden foods?

My daughter is 7 and has always been an adventurous eater and has been eating raw fish since about 2 1/2. Thankfully we haven't encountered any problems thank goodness.

Do you think I can you 1% Milk in this recipe?

I want to make coconut pudding (tembleque) and the recipe calls for 2 cups of milk. Do you think I can use 1% recipe in this case? I'd usually never use 1% milk in a pudding recipe but since it also contains cream of coconut and cornstarch I didn't think there would be a problem but want some input before I make a mistake and waste ingredients. Thank you!

1 (15 ounce) can coco goya cream of coconut
2 cups milk
1/2 cup cornstarch
1 pinch salt
4 tablespoons sugar
1 teaspoon vanilla
ground cinnamon (to garnish)

In a bowl combine milk and cream of coconut. In saucepan, dissolve corn starch in 1/2 cup of milk mixture.

Add remaining milk mixture, salt, sugar, vanilla. Stir on medium high until mixture begins to thicken. Lower heat to medium. Stir constantly until mixture boils and thickens. Boil about 2 minutes, stirring gently.

Pour into mold (or pan) which has been rinsed in cold water. Cool. Refrigerate 6 hours or overnight.

I grew up in the Essex St. Market when it was a total dive. I had the chance this weekend to peruse it for the first time in many years and came across Shopsins which I recalled seeing on the Food Network for their ebelsivers (please forgive my spelling!) When I came home, I looked it up on the internet to see what their offerings were (HUGE extensive menu) as we already had lunch plans but put it on our list of places to eat, I read horrible reviews of people getting kicked out and even cursed at for not following the rules. Now I cannot imagine with my 6'3" hulk of a husband that I'd be kicked out of anywhere but I'm curious...are these Yelpers exaggerating or is it true?

"Cooking" with a toddler?

My daughter is now 7 and I had her in the kitchen from birth (as an unwitting observer). At 2/12 I had her snapping green beans, stirring, measuring (with help), rolling dough, making meatballs and breading chicken cutlets. As much as I loved MY EZ Bake oven I never got her 1 for several reasons, space in my NY apt, and cost of re-fills and such. Now at 7 she has better real knife skills than many adults I know. Of course I supervise her closely when she's using a knife and in the kitchen in general. I'm sure whatever you do with your nephew he will appreciate it and have fun!

I don't know the scientific reason but that frequently happens to me and it drives me batty. Today it was 98 degrees and I bought peaches and miracle of miracles they are fine.

Soggy Pillsbury pizza dough

I use this product with success. I open it and unroll it onto a slightly greased cookie sheet, patting it out to fit. I prick it with a fork all over and pre-bake til mostly done. I top with sauce, cheese and toppings (olives, onions, pepperoni) and I always have a crisp crust throughout.

Can you substitute low fat milk in chocolate pudding?

It is my understanding that if you go below 2% that it will not set properly however since this particular recipe calls for heavy cream I'd be hesitant to sub lowfat milk for taste/texture reasons as well.

Best pasta sauce in a jar?

The only jarred sauce I will use on rare occasion is Vincents. I like the medium sauce. It's pretty hard to find though. Funny thing is that my 7 year old daughter never knew that spaghetti sauce came in jars at all. We were at a friends house and she didn't like the pasta and was moving it around her plate and my friend asked her if everything was okay and she politely asked "what kind of sauce is this?" and my friend replied "Ragu" and my daughter asked, "What's Ragu?"

I'm thinking that there wasn't enough liquid or perhaps a combination of that and the right temperature to bring the peas to their creamy consistency. Next time I'd cook them as per package directions and add to the chili at the end

My husband got us a snow cone maker yesterday and we want to make a coconut syrup for it. We are going back and forth between trying something involving either coconut milk or cream of coconut. I'd rather not waste money on trial and error and was wondering if anyone had any ideas. Thank you!

Do you tip for take out?

When I pick up my take out I typically do not tip however if I'm taking out sushi, I will usually put a dollar or two in the tip jar on the counter.

frugal or just plain clueless?

I am curious to know if he knew in advance of the bbq that you were bringing so much food. I kind of think it was odd on both ends, you for providing such a variety of food to a bbq you were invited to and him for practically providing nothing. I see a precedent being set here and it must be nipped in the bud. Next bbq he will expect the same and I agree with the previous posters, you need to spell it out for him. I will bring x - can you handle the dessert, etc? It shouldn't be up to the guest to provide the dinner. I had a friend who used to charge our friends to attend her bbqs and then would buy the cheapest food you can imagine.

I am 9 wks along w/ my 2nd pregnancy and much like my 1st I cannot take the smell of cooking meat. Also I've had a lifelong hatred for mushrooms and the other day I ate a big bowl of them. I don't have much of an appetite at all but I also previously didnt care for bananas but now crave them. The only things I really want to eat are fruits and vegetables.
