Help! Non-vegan looking for plant-based deliciousness...

I had the same issues when becoming a veggie with fake meats & crunchy-style vegetarianism. I used Madhur Jaffrey's cookbooks as an introduction into eating veggie & I still use her cookbooks today. I especially like "Madhur Jaffrey's World Vegetarian" :

What to do with chorizo flavored seitan?

Sounds yummy! Seitan doesn't need to be cooked, just warmed up. You can use it in any recipe you want to add chorizo. I like using fake sausage with shredded cabbage. This recipe is a good example:

Tofu dessert alternatives

This a recipe that I redid to avoid the egg. I just made them for a party and the batch disappeared within 15 minutes which is the best thumbs up I can imagine.

Almond Butter Cookies

1 cup almond butter
1/2 cup light or dark brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
2 tablespoons maple syrup
1 teaspoon vanilla
1/2 cup slivered almonds
1/2 cup semisweet chocolate chips

Preheat oven to 350 degrees.

Grease a baking sheet with butter and set aside.

In a large bowl, stir almond butter and sugars together until well combined.

Add baking powder, maple syrup & vanilla and mix well. Stir in the almonds and chocolate chips.

Using a teaspoon, scoop out small, walnut-sized amounts of dough and roll them in your hands to form a ball.

Place on cookie sheet about 1 inch apart.

Bake 10 to 12 minutes, until lightly browned.

Cool for 5 minutes.

tofu cheesecake recipe

This may be a bit late for your purpose, but jic...I like to cover the taste of the tofu and many recipes aren't adequate in that respect. Also, I find that silken is better by far so any recipe that calls for firm is suspect in my eyes.

Low-fat, low-calories vegetarian snacks

The recipe uses a smoker but if you use liquid smoke instead it becomes a very easy recipe. They are amazingly delicious.

I love Indian food. As you mentioned, I do have to make dishes without paneer/ghee/yogurt but most recipes can be made with substitutions. Falafel is always awesome.

I would prepare the chocolate as you usually do. If this is the recipe you are using (see below), it looks like the unsweetened cocoa is what flavors the cake. The chocolate chips & walnuts are just additions. Hope that helps you.

I'm reading through Julia Child's "The Way to Cook" (1989) and am in the midst of her chapter on sauces. (I'm vegan - I'm reading JC to help give me context b/c I'm teaching myself how to cook.)

Large quantity vegan baked goods

This is a Depression-era recipe that is vegan-by-default. I've used it many times, most often I make the cake in a "tea loaf" style and serve the cake as slices off the loaf. I like this recipe b/c it's easy, moist and flexible in terms of flavoring & quantity. I'm not sure if it freezes well although I can't see why not re: the ingredients.

I'm listing the recipe as found and included my notes alongside the ingredients. Hope this helps you. =)

Wacky Cake

1 1/2 cups flour
1/4 cup unsweetened cocoa
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup water (Note: I use almond milk)
6 tablespoons oil
1 teaspoon white vinegar (Note: I use Bragg's apple cider vinegar.)

Preheat the oven to 350ºF. Whisk the dry ingredients together in a large mixing bowl and whisk in the wet ingredients until all combined. Pour into a greased pan and bake until a tester comes out clean, 25-30 minutes. Cool pan on a rack.
