freezing yellowfin tuna

I'm wondering where you are and what grade you are talking about, as it would impact my answer. If you are talking about "ahi" grade tuna, suitable for sashimi, there is no such thing as fresh in the United States...all yellowfin tuna sold as sashimi grade (which is my experience with ahi) is required to be previously frozen due to parasites. While it is a myth that you cannot refreeze previously frozen protein (you certainly can with no safety issues, if the protein in question was kept safely prior to freezing), the quailty of said protein does degrade upon each refreezing due to that whole cell/water/freezing thing. Need THE BEST Ciappino recipe for Christmas Eve

Hi all! I want to do a condensed version of the Feast for Christmas Eve. We're not Italian, but I like the idea of starting a new tradition. I'd love to come up with a recipe that includes 7 seafood items into one amazing ciappino. I'm an adventurous cook, but I've never made this before - would love all your tips. So far, I've got lobster tails, crab, shrimp, scallops, cod...will probably be able to get clams and oysters or mussels. Give 'em if you've got 'em!

What to order at Ray's Hell Burger?

Thanks for the tips! I ended up going with the small with smoked mozarella, onions, and bacon. It was yummy! Too much for me to eat, though - I can't imagine someone eating the large one! Now on to find Chinese... :)

What to order at Ray's Hell Burger?

First, I want to thank all DMV hounds for helping me out over the past 10 days. :)

We're going to Ray's Hell Burger today, as that seems to be THE place for a burger (thought about Central, but doesn't seem what I'm looking for)...wondering what to order? The bone marrow or foie seem tempting, but are they just too much? Jumping the shark, so to speak? For seasoning, it seems like I should go with the classic grill...but from there I'm left wondering.

Any help would be greatly appreciated. :)

Thanks for the info - we were just at Rasika last night, although I would certainly NOT mind going back - it was delicious!! What type of mussels do you recommend at Brasserie Beck? Do you know anything about Luke's Lobster?

I noticed your name - I'm staying at the Omni Shoreham! I've already been to Dino's (loved), Pulpo (fantastic service!!!) and a few less noteworthy places around here. Do you have any must-do's in the neighborhood?

Where to go for dinner before the Columbia room?

We've got reservations for 9 tonight at the Columbia room and am looking for recommendations for a good place to eat before hand. We're open to all types of cuisine and don't necessarily need uber high end - just good food and service. As we are cabbing it, the ideal place would be within a short walking distance to the Columbia room.

Eating in bar at Rasika?

Thanks for the tips! We were actualy able to snag a table. OMG - this food was delicious! Butter chicken wasn't on the menu, but the chef said he'd make it anyway. Best. Food. Ever. :)

I'm meeting up with a wonderful friend for the day (and maybe night) next Saturday in Seattle. I've been to the usual stomping grounds (the market, museums, etc.) and I'm looking for outside the box suggestions of how to occupy our rare sans-kids day.
