Grilled Skirt Steak with Red Miso

This is my favorite marinade---for flank steak. For skirt steak I find it too salty, but the thicker flank steak holds up to it well. Then the outcome is yummy umami goodness.

Pumpkin Swirl Cheesecake

This was fantastic. The key is that it's already a great cheesecake without the pumpkin, so I'll be adapting this next time I make a plain cheesecake. But the pumpkin part is also very good. I suggest swirling the two batters very little; the fancy top comes at the expense of making it too close to homogeneous. You want something different from what you'd get if you just mixed the two parts together first.

Boneless Chicken Thigh recipe that would work for sandiwches?

When time is lacking, even just salt and pepper and then grilled is better than you would think. (Never underestimate chicken fat...) Grill pan works great for those of us with real winter, or when you don't have time to preheat the grill. Add a splash of lime juice and cilantro and you've got something fresh and yummy.

Mexican Chocolate Slice-and-Bake Cookies

If you use good cocoa (like Callebaut), these are really yummy. Not excessively sweet. Slicing is a lot easier than a spoon and a finger.

Spicy Thai Coconut Quinoa

I enjoyed this as written; the first word of the title is "spicy" after all. I disagree with the weeknight dinner notion, however. This dish takes time. Dressing in 1 minute? Maybe if you're a TV chef with everything measured out for you. I can barely zest 1 lime in a minute. But the outcome is worth it.
