Unbleached simply means that its a Kraft look, but "non treated" means no coding on it so no silicone on the paper

some companies have the Genuine Vegetable Parchment, that was processed with genuine vegetable, you really need to look if they carry the original trade of the GVP

Parchment paper

actually there is no diff. on the sides, parchment is equally coated on both sides with silicone however there is quilon coated paper that isn't parchment or you could find some different types of paper coated with silicone.... only real parchment will resist the heat of 425
