Sushi Sho to Reopen in El Cerrito

Woohoo, this makes me so happy!

What mistake do you always make when you're cooking in a rush?

Not a cannibal unless megjp is a cat :)

Honeymoon Itinerary: In need of Critiques

Sure we do, cioppino.

Looking for best Peking Duck from a take-out place to serve at home - in SF

Keep in mind that Peking duck is usually not done for takeout. The crispy skin can get soggy in a container, and steamed buns can quickly get hard after they cool down.

Hibachi - Food Safety

Did he use the knife on any cooked items, or just to cut apart raw chicken?

Bourdain in San Francisco for Layovers

I thought it was weird that Tony didn't go to the original Rosamunde's next door to the Toronado for a sausage but then they briefly featured the Mission branch later.

Do you have a special dipping sauce concoction for dumplings?

I usually use 50/50 soy/vinegar and a generous spoonful of sambal oelek (or similar chile sauce).

shanghai mystery noodles?

Were the noodles flat and perhaps cold? It could be liang pi noodles.

Fried Rice Question (moved from L.A. board)

Yep, the wok and high heat are key. This is why it's almost impossible to cook restaurant style Chinese food using typical home burners.

Fried Rice Question (moved from L.A. board)

Make sure you are using long grain rice for Chinese fried rice. Wash the rice until the water is clear to get rid of excess starch before cooking it. Then cook it and put it in the fridge. You must use day old rice to make fried rice.

When frying, you might need more oil than you think you do, and get it hot. Keep moving the rice around nonstop in the wok when frying it. It helps if you have a wok spatula/ladle in each hand if your wok is stable enough.

How do you make pork stew more flavorful?

Add some bacon.

Christmas Ham Source in East Bay

I just happened to go to Costco yesterday, and the Kirkland ham they have is Niman Ranch hormone/antibiotic free. 3.99 a pound.

Christmas Ham Source in East Bay

Not sure if it's hormone/antibiotic free, but if you are looking for a city ham the Costco Kirkland spiral hams are pretty good, especially for the price. If you want a country ham, you can often find Smithfield hams in Chinese supermarkets or meat markets, as Smithfields are fairly similar to chinese jinhua hams.

Sushi Sho to Reopen in El Cerrito

Sounds like the place is going to be packed even more than it previously was since all of us have been anxiously waiting for it to reopen for years. :)

Cooking with Fu - need recipes

Fu is a dried baked wheat gluten, so you can just soak/drain it and then use it like you would use a meat in a stir fry. It can also be used in a soup or something.

bad sticky rice

Boiling should be fine. Shouldn't be bitter unless you burned it? I usually just throw it in my rice cooker though and use the sticky rice setting, which is more or less boiling.

What are the Best Buns For Pulled Pork?

I love King's Hawaiian rolls with pulled pork.

Spice strategy?

On Good Eats Alton Brown has his spices in tins that stick with velcro to the inside of his cabinets.

Is American Kobe REAL Kobe??

It's not Kobe beef unless it's produced in Kobe under some criteria.

American Kobe beef is Wagyu cattle crossbred with Angus.

NFNS 7/17 with spoilers

The advantage is that she got to choose what order (and sort of what type of course) everyone got. So, not only could she choose what she wanted to make (meat course), she could stick someone with a course that they may not be able to execute well (dessert/salad/cheese/etc).

Currently, what is your single most addictive chinese dish to order in SF?

Shanghai soup dumplings at Shanghai Dumpling King or the cumin lamb at Spices II.

have you noticed ben & jerry's quality going downhill? espcially the classic flavors?

Ben & Jerry's has been bad ever since they sold to Unilever. The ingredient lists now have all sorts of crap in it.

Tamales... In a Chinese bamboo steamer?

I don't see why it wouldn't work. Those bamboo steamers are often used to steam sticky rice zhong (chinese equivalent of tamales).

Maltose Chinese Sweetener

I don't know offhand where you can buy this online, but it comes in a short white plastic jar with an orange top which you can find in most Asian grocers.

Otherwise, you can use molasses as a substitute or even honey.

Shing hai = bok choy?

Shanghai bok choy or baby bok choy is simply bok choy that is picked at a less mature state.

Food Scars - Things you will never eat again.

McDonalds chicken mcnuggets. I ate a large box of them and then got on a multihour bus ride coming back from a school field trip. The bumpy bus made me nauseous and I could do nothing except throw up except in an unused pocket in my backpack. The backpack still smelled like mcnuggets for months even after being washed.

Sweet Rice Setting in Zojurishi

Yeah, it turns out fine. I just fill it to the sweet rice line of however many cups you put in, and hit the button. YMMV depending on what brand of rice you use.

Sweet Rice Setting in Zojurishi

Yes, I rinse the rice thoroughly until the water is clear, but I've never presoaked it.

Chinese dipping sauce for dungenese crabs?

Red or black vinegar and julienned ginger.
