Charlotte Vicinity - Local Cheese Makers?

I was listening to a podcast regarding local cheese making. Is anyone aware of any local cheese makers in the Charlotte vicinity and any retailers for those local cheese producers? My first thought was asking at the Earth Fare cheese counter or the Dean & DeLuca cheese counter. Any other ideas?

Green Coffee Beans in Charlotte NC for home roasting?

I would like to try home roasting of green coffee beans in Charlotte NC. Has anyone had any experience purchasing green coffee beans locally in Charlotte? I generally travel around Center City and the South Park Mall area. I checked the Caribou in center city but they don't carry green beans. I thought about ordering from Sweet Maria's online, but would like to find a local source if possible. Thanks.

First time in Charlotte, NC

Most people where I work like "Red's BBQ" http://www.redsbarbeque.com/daily.htm - Friday - Tryon St / Charlotte, NC (Beside Bank of America Building). I am not sure if its what most around town would consider perfection, but its pretty good by my standards. If you are around town on a Friday and near the center of town, it comes to you via a food truck/trailer.

Pastry - Amelie's has definitely created a strong following. Definitely worth a try http://www.ameliesfrenchbakery.com/
