Boxty (Irish Potato Pancake)

My grandmother always did something a little different for potato pancakes. The potatoes were grated with onion and garlic into pancake batter and then griddled. We ate them like regular pancakes, only she used dark corn syrup for them instead of maple...still do. I get alot of weird looks about butter and syrup on potato pancakes w/garlic & onion, but I swear they are good. I am definitely going to try this version too.

Corn Hotcakes with Blackberry Syrup

If you really want to save time, you can use boxed cornbread mix using extra milk and real butter to make it more like a pancake batter. We use the krusteaz one all the time to make corn cakes with meals. I usually whip some honey butter to go with it.
