Cap of ribeye (or, for serious beef geeks, spinalis dorsi)

Well I can order it from my supplier. Not sure how I would go about getting it if I didn't have my connect. This is really the best piece of meat on the animal.. Closest to the heart, the greatest amount of marbling. I use to serve a dish with the eye cut into a baseball steak and then a piece of cap as a bonus on the plate :)
I would ask a local chef in a good Resto, my have a similar connect as I do.

6 years later and I am replying to your uestion.. sounds about rite :)
the best way to cook this is not like a roast (slow and low) but like a quick grill or even better a hot pan seare on each side and let rest and serve. I usually cut it into 2 inch squared cubes, season well and into a hot pan with a little butted, flip once and baste with the brown butter in the pan. It is my absolute fave!! So good!
