Where should an aspiring cook begin?

I've always been a terrible (really terrible) cook, but for the past year or so I've been slowly trying new things and trying to teach myself how to cook well. Problem is, I'm really unorganized in my learning and I can't seem to figure out what things I NEED to know before moving on to other things.

Can anyone share their thoughts as to what might be the dishes or concepts I *must* master in order to move on to bigger and better things? I tend to try things that are too complicated and I end up ruining them. I'd like to have a better idea of what basic things I need to have down pat before I can move on to more complicated and complex recipes.

What everyday dishes don't you make?

I'm not big on roasts. I realize you can get several meals out of them, but I cringe when I see the price tag on them at the store.

I also only rarely cook with potatoes. Not sure why, because I love them and they're easy. Maybe I should find some new recipes...

Beverage Calories

I try to go calorie-less in my drinks about 95% of the time. I drink tons of water, tons of Vitamin Water Zero (nothing with artificial sweeteners), black coffee, and unsweetened tea. That way, I don't feel guilty when I indulge in an alcoholic drink or a smoothie every now and then.

Anyway, that was the long answer. Short answer to your question: no, you're not the only weirdo.

Everything sticks to the knife!

Ah, so helpful! I know it's not a crisis, but I already have enough problems in the kitchen that even the mere annoyance of food sticking is enough to make me lose my marbles sometimes. I'm going to try that draw cut and see if it gets me anywhere.

Everything sticks to the knife!

I'm a bit of a cooking newbie. Still ruin dinner about 50% of the time. Having said that, I have this issue when I'm chopping or slicing stuff. How do you make your meats and veggies NOT stick to the knife while you're cutting? My parents bought me a set of good-quality knives for Christmas, so it can't be knife quality (I would guess). Doesn't matter what knife I use, this has always been an issue. Is there a way to prevent this, or do you just have to get used to it?

Squishing potato chips in your sandwich...anyone else do this?

I don't mind chips in a sandwich...it's the people who dip French fries in their ice cream that have me baffled...

Childhood favorite sandwich

My mom always made "grilled pizza sandwiches," which were grilled cheese with mozzarella, pepperoni, ham, and pizza sauce. I get to drooling just thinking about it.
