Definition of a fresh bagel?
First, I have had Bagels In NY, LA & Europe, also I have been the Bagel Purveyor and Bagel Chef for Wolfgang Puck & Food Network for 20 years, Second, all that I just said was a lie. I just know a good bagel when I eat one.
I like a good onion bagel with cream & lox and I know bad ones when I get them. You can tell by the squeeze and read the ingredients of retail bagels if it says "dough conditioners" you have too soft of a bagel not a real chewy one. I remember buying Trader Joe's bagels when they were little more than round shaped bread, I use to write them and whine whine whine (because I love TJ's and want the best for them). Now, you can get a decent bagel at Trader Joe's but it is still retail not fresh. I find fresh everywhere and I try to find fresh cream cheese without gum stabilizers too but that's another topic. Any baker that has them on racks not in bags makes 'em fresh. Panera Bread even Von's Pavillion has fresh bagels. Food just tastes better hot & fresh, if you think It's just a bagel, then you eat it.

You CAN find decent bagels in the OC. Bagelmania in HB & CM has won Best of OC 2008, 2009, & 2010.
Urban Spoon raves about Bagel Shack in SJC, SC & MV. I have tried each place and they boil them first, they are spectacular. Put on some jeans, I'll pick you up on the Harley and we will nosh girl.]

a 1/2 cup sample... THE BEST GRITS IN THE WHOLE WORLD!!!!
They are big thick grits so fresh and natural, you have to put them in water first to separate the bran, then cook for 30 minutes. Mmmm! No quick grits here baby!
