Making cheese

I have been making cheese for about two years. I live in southern California so I only make cheese in the winter so my season is short. because I live in So Cal, I have problems with maintaining a good temperature for aging the cheese.I tried using a dedicated section of my refrigerator, but the temperatures and humidity were not ideal. Any cheese makers out there who can help?

I went there last night and it is a very welcome addition to PQ. We have a few places that are OK, a few that are just appalling and finally we have good Thai food. We got there at 7:30 and it was packed. I think they need to expand :)

Thanks Cutiepie, I used most if the pasta for lasagna. I will freeze the rest. Anne Burrell is an animal, I always end up taking two hours at best.

I am curious how long I could store the dough in the refrigerator though.

Homemade pasta.

I recently started making pasta with my Imperia pasta machine and it has been fabulous but I am curious about the rest time. All my recipes say that after you finish kneading you need to rest the pasta dough for 30 minutes. Does anyone know if you can rest it for a longer period of time without impacting the flavor/texture? And how long could it rest before ugly things happen? 2 hours? 8? overnight?

Help! Feeding 22-24 people on a budget

Hello everyone. I wanted to thank you for all your help, The dinner was great, I made some lasagna and a couple of vegetarian casseroles. I also served a Caesar salad with my first attempt at homemade Caesar dressing and chocolate chip cookies. I almost brought garlic bread but in the last minute frenzy I accidently turned the bread into carbon. Plan to press that later and make diamonds. When I got there I found out Panera brings fresh bread to the house daily so that was good news.

My hubs and I are cooking for a largish group of people (22-24) and its for a place like Ronald McDonald house but not for children, its associated with a large hospital in our area. Until recently we were going to be going along to serve and I just found out we are in charge.

I have been cooking for years and have made meals for 35-40 people in the past, but I never had A. a tight budget and B. Any grip on how to calculate how much to make. My coping mechanism has been to make too much food and send people home with leftovers. The event budget and my current budget will not allow my usual overshop/overbuy technique.

So here is my question:

I am planning on making lasagna and ziti, a large salad and cookies for dessert. How do I figure how how much to make when serving 22-24 people?

LG is terrible, we bought one and the door seals stick and peel off, the ice-maker broke and the drawer front of the cold cut drawer snapped off.
