Easy Greek Salad

My ex boyfriend's family is Greek and they said lettuce of any kind is not traditional. They had a salad of heirloom tomatoes, olive oil, balsamic vin, s&p, feta, olives, lemon juice and a pinch of fresh oregano. This version seems Americanized.

Just moved to Mountain View from New York. Help an east coast hound find his new favorite haunts!

I haven't had a slice of Duarte's pie in years...I go to Phipps and pick them myself and make ollaliberry gelato. They have awesome spice blends, their garam masala is amazing! The artichoke bread is a must when I go there I usually get the garlic artichoke batard. Harley Goat Farm's is also an awesome place to learn about goat cheese making and you can have a conversation with one member of the Duarte family who owns the goat farm.

In culinary school my chef was wondering why I wanted to make cream of artichoke soup with anchovy crostini, so I brought her and her husband to Duarte's and she fell in love with the soup!

Homemade Tofurkey with Brown Rice Stuffing

I for sure want to try this recipe for my vegan aunt during the holidays. I heard that it lacks flavor from the previous posters, I would fix this problem with adding a little liquid smoke to it also by adding more savory herbs like marjrom and maybe add more thyme and sage. I have an electric smoker so I would probably cook it in there as well to infuse more flavor. I want to try this but substitute the brown rice with wild rice.

Smoker. Is it worth it?

My family uses our smoker at least 4 times a month, we have a Bradley electric smoker and it's worth the cost! We also bring it camping and we just place meats in it in the early afternoon then by night you have an easy camp dinner with out all the stress. We recently discovered smoking our homemade ketchup and it is amazing! I also use it for my small business, I make home cooked meals to go for busy parents and they love my dry rubbed smoked chickens.

Just moved to Mountain View from New York. Help an east coast hound find his new favorite haunts!

Mountain View has some amazing spots, but don't forget about our beautiful California coastline! There is a tiny town that is south of Half Moon Bay called Pescadero they have Duarte's (Do-arts, not Du-arte's I know the family and their last name is said like the first example) Tavern. The tavern has been featured on Food Network for the best cioppino in the state, they are also famous for their extremely Californian cuisine like cream of artichoke soup and ollaberry (cross between a black berry and a raspberry) pie. The prices have been hiked up due to the publicity that's the only drawback. My grandpa used to bar tend there and the prices really have changed over the last 6 years or so.

Check out The Half Moon Bay Brewery as well, it's about $11.00 a flight for 12 or more beers. They also do live music and serve some good cali cuisine.

What did you or your Mom make when you were sick?

I remember my mom would usually go for the can of chicken noodle when she was busy. When she had time she would make some yogurt ice pops and cinnamon toast. As I got into my early teens my mom made a miso ginger soup with chunks of chicken, soba noodles and chard.

Paleo diet - any experience?

Back in my college days (before culinary school) I was a die hard anthropology major working in an anthro lab measuring skulls of our ancestors and doing ethnographical articles on specialized grocery stores. My professor who I was interning for and I held a Paleo feast for the department. It was really fun! We gave out huge bison steaks in a morel mushroom sauce with a side of sauteed wild ramps and fiddle head ferns. I am now considering a Paleo diet because in culinary school I had to taste so many fattening foods (fries fried in duck fat) and the baking and pastry students always gave us salted caramels at the end of the day....lets say the freshman 10 that university students get was nothing compared to the 1st year culinary school 20. My family is doing a Paleo style bbq for Memorial Day today!

Will Mayonnaise Give Me Food Poisoning?

The one scary thing I learned in culinary school was that garlic cloves sitting in olive oil on the shelf can give you botulism. The only mayo I use is the stuff I make with my free range pet chickens eggs.

In N Out Burger question for a newbie

I think the reason why people end up disappointed from their first experience is because they haven't discovered the non touristy side of the menu. Like animal style fries and burgers, protein style (lettuce wrapped burger), grilled cheese, Neapolitan shakes and extra crispy fries.

Are Magnum Ice Cream Bars All That Great?

I think the chocolate is different here in the states, I had a ton of Magnum bars in the UK and they defiantly have a smoother chocolate. My favorite is the caramel.

Baked Kale Chips

I love to make kale chips for parties, it really is a nice conversation piece to the party. I typically sprinkle on my favorite Cajun seasoning on the leaves and cook them on an oiled wire rack at a low temp.

Michael Mina San Francisco

Michael Mina is awesome to talk to. I met him once while were in lecture in culinary school. His prices are $$$ but it's worth it. Maybe he will be in that day, my hospitality professor drinks with him sometimes. I would go on a weekday night so the noise level is reduced.

I remember in culinary school we would double glove our hands. Scotch bonnets eat through latex. I was in charge of cooking lunch for my classmates that week and I did a Caribbean pepper pot, I'm so happy I brought my Oakley ski goggles to deflect the vapors from the scotch bonnets.

Best Clam chowder and Best Cioppino

Duarte's in Pescadero (south of Half Moon Bay) has been featured on Food Network for their chioppino it is the best chioppino I have ever had. The owners have a garden in the back of the tavern and they use the garden fresh tomatoes for the sauce.

Yup, It is a favorite place for an after school meal. They put pesto and garlic aioli standard and its amazing.

Where to buy frozen crawfish / crayfish?

I think there are websites that you can get them direct from Louisiana. It really isn't crawfish season though so it might be hard to find. They usually get big during the summer and that's when people catch them.

So, Californians what is your favorite sandwich from Mr. Pickles? My high school is really close to the original Mr. Pickles so I have a lot of fond memories of school letting out and walking down to get a sandwich with friends. Even 7 years after high school I still get a craving and I have to make a stop.

CCSF Culinary Training Program?

It is M-F 9:00am-3:00pm, if you want to sign up for baking and pastry it is 6:00am-12:00pm. I usually showed up on campus an hour to half an hour early to eat breakfast and if your in second semester you have to be in uniform at 9 sharp. The program isn't unit based it's based on how many hours have you completed.
