Tacorito- Gone but not forgotten...Omaha/Lincoln, NE and CO

When I was growing up in Omaha I was a bus-girl about 35 years ago at La Fonda's aka Holly Inn. The restaurant was founded by the late George Pappas of CO. I fell in love with the "Tacorito", a big stuffed burrito covered by a secret gravy/sauce and cheese. I have tried numerous attempts to duplicate this delicious heart attack on a plate, and finally almost have it mastered. It's like anything, eat in moderation and savor it. Their nachos were exceptional, too. It must have been the chips and cheese they used. All of their restaurants have closed after over 35+ years, but other restaurants are making a similar dish or were given the recipe. I won't mention the one I tried, but I think mine came out better. I use to get their "secret" gravy aka Colorado sauce and freeze it and bring back to Daytona, but since they are gone now, I just have to make them as close as I can. I do miss the atmosphere. It was a fun place to dine...

Very Delicious Pizza in Omaha

I love this pizza. They use an awesome "Romano Cheese". If anybody knows a recipe for this ultra-thin pizza and their cheese distributor, it would be great. Kopy Kat recipe would be okay, too. I can't find decent pizza in Daytona Beach that even comes close to La Casa's.

Excellent Thin Pizza in Omaha

I love Big Fred's Pizza, but live in Daytona Beach. I can't find any pizza quite like it. Their house salad dressing is also delicious, (but not their bottled dressing that is sold with "preservatives")
I would love a recipe, even if it's a Kopy Kat for both their pizza and salad dressing. Any advice would be greatly appreciated! I get up to Omaha and eat there all the time and usually freeze some to bring back with me to enjoy. I migt mention they have great roast beef, Mostaccioli, Meatballs, Prime Rib, etc. Big Fred Bruning was an icon in Omaha and is missed by many. I think he was there everyday until his sad passing.

Maria's Soft Shell Tacos and some Omaha/Ralston

Maria's has some of the best Mexican food I have ever had.
My favorite is the flour "Soft Shell Taco". They are a thicker flour shell that is deep fried. I'm not sure but I think that the meat and cheese are inside the raw flour shell before they are deep fried. Lettuce and tomatoe added after? I live in Florida now. Every time I get back up there I freeze and bring back tacos's (Less the lettuce/tomato). Their sauce is also excellent! I have tried to master these delicious tacos, but my attempts have not been quite so good...There is absolutely NOTHING even close to the Mexican food here in Daytona. Maria's also has other great food, ie: their Hot Sauce, Burritos, Enchiladas, Bean Dip and Nachos prepared with Flour chips,etc.
Can you overnight me some? Otherwise, if anybody knows how they make their tacos, let me know. "Maria" I promise I won't tell anybody the secret. I wouldn't want anybody else to know it either! I crave them soooooooo much. Dedicated Facebook fan, too. Mary

La Hacienda - Mason City Help!

Morganna, I'm originally from Omaha, NE, and we had a similar dish at my favorite restaurant that was founded in Colorado. It has closed now. It was a "Tacorito". I have searched for about 35 years to master it and finally found a very similar recipe, if not the actual recipe. You can find it on "A Chelsea Morning by Anne Morrow Lindbergh. It's delicious and sounds similar to what you are looking for. Let me know what you think. I live in Florida, but always got my Tacorito fix when I would visit. I understand a chain "Romeo's" took over the recipe, but not alll that impressed.
