Electric kettle vs stove top?

Is it worth buying an electric kettle for boiling water...? I (think) it can boil water alot faster but is it more efficient to use than a regular stove top kettle (energy wise that is)? I am trying to be more energy conscious (both for saving money and the planet).. Or is the energy use between the two neglible?

Should I wrap them individually or put them in a tray and just cover with foil? Also should i season them beofre roasting or wait till after they are cooked and I have peeled them? Thanks.

Zuni Chicken or Chicken Marbela?

Thanks all for your thoughts. I think everyone is right about the Zuni chicken "steps" and possible smoke issues. As for Marbella I was a bit concerned with the taste of the ingredients going over my guests. So does anyone have another chicken recipe they might suggest?

I have never roasted a chicken before and want to try either one of these recipes for some guests I am entertaining this week. Am I nuts? Every thing I have heard from you all is the recipes are pretty fool proof. Should I try it, if so which one? Or stick to something I have made before?

My brand new LODGE cast iron pan

I do heat it up after a rub a thin layer of bacon fat on t. I alsousually leave it in the oven so it gets heated up whenever i use the oven (even when there is no food in the skillet). I heard/read that was OK to do..?? Also thank you for the advice of the high heat. I suspect I am not letting it heat up high enough. I am thinking i should leave it on a high flame when I am about to sear a chop for about 3 minutes before even thinking about putting food on it. Thanks again

I did. I wound up making pork chops (by default only bc it was what I ahd in the house). I dont think i heated up the pan enough because it definitely didnt get the sear on the outside I was looking for. I also have been putting a very thin layer of bacon fat on it and leaving it in the oven so I dont know if that is what is making it look like it is "dirty". I heard bacon fat was good for it but the pan does smell like bacon all the time/

How do I know when my CI skillet is 'Hot" enough?

That was exactly my problem about thinking it was hot enough and then the meet coming out kind of gray color. Thank you for the hint about the oil. I was thinking I needed to just discipline myself and say leave the pan on high flame, but then i dont know would it take anywhere for 3 minutes to like 10 minutes (or more) to get it to the right for searing soemthing....

Thanks all. The laser thermometer is a great idea. So should I presume that 400 degrees would be the odeal temp to get a skillet if I want a nice sear on somehing (and then if I want to cook it more into the oven right?)

Hi I know this may be a bit dumb but what is "considered very hot"? How long would you heat it? Say if it was a cast iron skillet and I had the flame on high, how long would it need to get heated to before i put a chop on it for it to get a great brown sear? I mean I know when people say heat up an oven to say 400 degrees to preheat that is easy because I can obviously see the tempearture on the oven but how can you tell on top of a stove with a cast iron skillet?

A pork chop dilemma…

Ok it is really simple and pretty fool proof. First thing I did it i thought it was just luck and would never be as good but it turns out great every time.
Preheat the oven to broil.
Thickly coat each pork chops with Dijon mustard . In a shallow bowl, combine 1/2 cup Italian bread crumbs ,1 teaspoon salt
1 teaspoon pepper, and 1/2 teaspoon cayenne pepper. Sprinkle this mixture evenly over each side of chop. Arrange pork chops on a wire rack set on top of a sheet pan. Spritz bread crumb coating with a little bit of oil spray. Place under broiler and cook on both sides until coating is brown, about 5 minutes on each side. I think it is suppose to be a pretty low fat recipe too.

There is a really good and simple "AIR FRIED PORK CHOP" recipe that uses just breadcumbs and you bake the chop. Really good and simple. Let me know if you would like the recipe. We like thinner chops too!

Hi Mandymac, I tried looking for the skillet cornbread recipe on the internet and cant find it. Can you share it with me please? Also do you think it is OK to try the cornbread first or should I use the skillet for a while and fry some bacon for a couple of weeks before I attempt cornbread?

Yes I was always worried obviously using metal on non stick so I pretty much only have plastic right now. But since I have the cast iron now, if for some reason i couldnt use plastic in it. Thanks again for clarifying

Thanks all. Some much helpful info. I am so excited. The silcone handle sleeve is a great idea. I am sure considering this is my first CI skillet I will forget and grab a HOT handle.

OK sounds good. Cornbread is a nice idea! Just wondering since the skillet is preseasoned, do you think I should go season it just in case before I use it the first time? Also I will be sure not to use any soap in my cleaning.

Hi Ansy So it seems like metal is OK to use in with cast iton, so i will definitely invest in some metal utensils. In the interim can I use my rubber spatulas or will the plastic/rubber not be good with the cast iron?
Also thanks for the headsup about the HANDLES??

Thanks everyone for all the suggestions. Frying seems great perhaps some bacon WITH some STEAK! And I have been thinking of trying the ZUNI Chicken recipe (again b/c of the raves from all of you on this site) so that might be my second meal.

Also I was wondering what utensils should i use on it? I have only been using my rubber spatulae and spoons since i have been using non stick but now should i get some metal spatulas and wooden sppons? What is the preferable tool(s) for cast iron? Thanks again everyone
