The French Laundry: seeing the kitchen before or after dinner?
I would tell your waiter that if possible, you would like to see the kitchen. I think taking a mid-meal break is the best bet for you. I was there for a very long lunch and was able to see the kitchen while they were prepping for the dinner service. Keller is rarely in the kitchen, Tim Hollingsworth is the chef de cuisine.
Cooked Lobster Meat Sources?
I go to New England Lobster in SSF, not easy on transit but the freshest product around. I usually call the day before, and they poach and pull the lobster meat for me right before I come and pick it up. Nice guys there too.

You could also call Sun Fat on Mission and ask if they could cook a lobster for you. I've bought fresh there before.

Louie's California Chinese Cuisine
I was hoping for a more hands-on approach to the dumpling class, but it was mostly watching. The woman making the dumplings was skilled and had a great folding technique. The drumming and dragon dancing on the beginning was a nice surprise. The buffet was not great with the exception on the dumplings. I felt like there was too much msg in the dumpling filling but they were still tasty.
I signed up on a list to have the dumpling recipe emailed to me but have not received it. I enjoyed talking with fellow hounds and people interested in dumpling making.

Where to buy small buns for sliders?
TJs also has regular slider buns. I was able to special order a case ahead of time when I needed 100 of them for a party too. Another option are the sweet Hawaiian rolls you can get at Asian markets. They're about the right size.
For those ordering at Acme, for any special order, you need to order 2+ days in advance before 2pm and you must pay cash in person at the time of the order. No phone orders allowed. They don't make it easy there but the bread is delicious.
Looking for a restaurant with an exceptional cheese plate.
Cyrus has a great cheese cart, thought it was way better than Gary Danko.

Trader Joe's vs WF Fresh Turkeys - moved from San Francisco Bay area board
Hi. I've always gone w/ the free range Diestel hens at Whole Foods ($2.49/lb) but I've heard that some people like the turkeys at Trader Joe's too. Any personal experiences with the WF store brand of uninjected natural turkey or the different turkeys at TJs?

What's in and near Bernal Heights?
Everything I tasted was good-great (croissants, scones, pan, fruit pastries), but I also picked up an assortment at 7am on a weekday when everything was very fresh. Sorry to hear about your disappointing experience.

Second on the back garden at WSW, Sandbox, Alemany Farmer's Market, MOM (what we call Manilla Oriental Market), Beijing, Blue Plate, some things at Lotus Garden (shaking beef is good but sometimes I just suck it up and go to the 'Loin if I want better Vietnamese).
For dim sum, it's a pretty quick drive to Koi Palace or Millbrae.
From my part of Bernal, Beretta and La Taqueria are close, and bart or the 14 or 49 bus get you to all parts of the Mission and to the rest of the city quickly.
Some of my friends like Baby Blue BBQ. I'm ultra picky about BBQ and have had some good meals there and some ok meals. The people that run it are really nice and they deliver.

aioli - what am I doing wrong?
I also use mainly grapeseed oil, plus some EV olive oil for flavor. Have had luck in a regular blender and by hand (it's a workout but not that difficult). I've also found that after you've built your emulsion, you can start to add the remaining oil more quickly.
Souce for Puff Pastry
I used to buy the puff pastry in the flat box at TJ and have been told at all the SF and the San Mateo store that they are out and will not be carrying it again. I recently purchased some from WF which was more expensive but haven't had a chance to use it yet. Can't recall which brand it is.

Poc Chuc is a sit down place and can be a little dark during the day time, I do love the platio maya there though. I would choose Tartine over Just For You. Tartine is more special and decadent in my opinion, whereas Just For You is a solid neighborhood place for breakfast standards with a few special items, like the green chile sauce.

I think you need the microbes to make creme fraiche b/c it is cultured by definition. Pasteurized cream should work better than UHT cream.

Thanks for organizing and bringing the wine! I live near Inka's and never made it in over the years so it was the perfect opportunity to try a lot of dishes. I thought the ceviche was fresh tasting but definitely would have liked it to be spicier. I prefer the yucca fries at Limon Rotisserie and found the anticuchos to be tough and in need of spice. I was also disappointed by the aji de gallina which is normally a favorite of mine. It was darker yellow here and not as creamy as other versions I've had. I cook a lot of lamb and thought the bite I had was a tiny bit dry but the white beans with it were good.
That being said, I enjoyed the chicken, picante camarones, ceviche, and pescado sudado enough to put Inka's on my take-out and neighborhood list. I read on yelp (take w/ a grain of salt) that there was an ownership switch to a Chinese owner a while back. No idea if this is true or if they are Chinese from Peru, but I thought the chaufa de camarones and the pescado sudado had a more Chinese or Asian feel to them than other versions I've tried, not to say that there was anything wrong with them though! The service was welcoming and gracious, chilling the brought bottle of white as requested.

I've been a long time customer of Hamano but I have to say their lunch is pretty lame. Limited menu and pre-cut fish. Dinner is good, especially if you sit at the bar and order specials. The ambiance in the back room is a bit on the sterile side.

Hi. I'm looking for the French word for a tart made out of ratatouille type vegetables (zucchini, tomatoes, etc) that are thinly sliced with a mandoline and arranged in concentric overlapping circles. I think it starts with a T but I can't remember. Thanks if anybody can help me with this.
