My son in law's mom made terrible croquettes, he remembers. I was able to tell him that hey actually are incredibly difficult to make.As a chef I had learned many things and come to the conclusion cooking is not easy and a lot of brave homemakers try their bet and do not accomplish

she was pretty fierce to east what she had cooked....did not cook food you wanted...like a great BLT. She actually was good at mashed potatoes and salad. Come to think of it. We were very poor, living on a war veterans stipend.Close to poverty, in newton that i not easy. lots of envy happens.I became a chef of French Cooking and Amazing flavors were my fortune.

At Newton High, lunch envy was of those who brought BLT'S for lunch...me, peanut butter and grape jelly.

Any memories of "poor people food" from your childhood that you still crave?

Wonder bread, peanut butter, marshmallow, RUM TUM TIDDY , a bread,tomato cheese dish, tomato juice,toast,for a long time american cheese in a grilled cheese, spaghetti, mac and cheese, applesauce, it all com in back to me!

What did your Mom always have on hand, that you NEVER do?

What's The One Thing You Can't Eat, even for money.

There are plenty of things I could not or would not eat...like Anthone Bourdain does on some of his shows so he is a good guest that would not insult the host, usually it seems to be a manly thing he faces...though there are family dishes with ingredients that make me go weak at the knees...On the local level, brains do not show up on my shopping list.

What was the worst food you HAD to eat as a kid?

Tripe, Tripe and more Tripe...sometimes pickled. very gagging.

Any memories of "poor people food" from your childhood that you still crave?

hot dogs, saltines,,,actually on Sunday night supper might be crushed crackers and milk.
I still like legal seafood little bag of crackers with nibbles of extra dark chocolate.

I think Pink Slime is awful and I don't like a lot of things that happen to a wonderful food supply we are lucky to have. Period.End of story.

Pink Slime is "generally"safe, and that is not the whole story .

The quest to know what is in the food you buy to eat and to know where it comes from and to know a lot of things we take for granted if you grew up in an Agrarian culture...Pure is the water we want to drink and also in what we eat. Having a choice is freedom of choice. We have to fight for our rights on and on it seems.

This is such a new discovery, that you can make Crispy Kale, plain, salted, flavored, what ever you like and it does not take long to get the hang of it..
Wash and really dry the kale and tear into mouth sized pieces...preheat oven,mine has a pizza stone is is convection , 200 to 250 for 10 to 12 minutes..check the kale to see if it has Crisped foryou. sometimes it takes a minute more or a minute less.
I am in love with this Kale andcould eat it all day,and I do. It does not create any gastro [problems you might get from a lot of steamed kale.I also used spray can of conola...olive oil would also work, this way a lightly over spray, so there is not too much. I liked smoked paprika,cumin and very lightly salted.
Truley a new good thing in my portfolio.

Your posts about silver lined cooking pans caught my attention..i have 4 fabulous silver lined pots with silver line covers...2 casseroles and 2 saute pans...i cannot find any information about them and why they were desired by some. i know silver is pure..i get a kick out of using them carefully. i bought them while woking in cambridge ma in a fabulous kitchen arts store.

would love to hear from you...
I love dosa too, studied in ny with julie sahni,learning indian food...her food was over the top delicious and not what is found in what we call
Indian..I think they need to know how to educate the customer and probably with good reason do not.I te ach cooking and lots of people are so intimidated by cooking they might make it difficult for waiters to discussthe food..

Favourite Crepe Recipes

hi sarah,
would you believe i won a stack of crepes with apple/cognac filling from julia years ago.
my favorite dessert,maybe..as a pastry chef, i enjoy many desserts and have several
super favorites, most almost unattainable unless you make your self.

today, yes just this morning, i found some crepes in the freezer and made the apple filling from memory, since i might not quickly find her book among the 3000 books in the attic library that i have.

Anyone Been to China Sky in Wellesley?

Wow, you went to Alinea? waqs there a while back for a IACP conference!!!

China Sky was quite good, for what is available..last meali had was awful..and the hostess was unwelcoming, to a single lady, little did she know i tip well.
Chicken tasteless, and the pineapple watery and dull. wine was good.lately the wine is often better than the food.

where to buy corn syrup?

whole foods has both, organic and regular, maybe also "Light"

What size Fry pan?

hi, by now you might hqave your answer...i have been cooking for 50 years and am now enjoying the decades of experience by being able to be very spontqaneouss and just knowing what works...size pan, what are you cooking and for how many give clues to the size pan required..most saute, you do not want to crowd items, to prevent steaming.

once on marthas vinyard, i had lettuce from the loccal farmers market that was in better shape one month later than the supermarket lettuce..i was really taken aback!I use the green bags...hoping!

the better and fresher the salmon, the less you do to it...hot oven, 400 or 425m preheated
a little butter and fine extra virgin olive oil in the bottom of your baking dish that is not much larger than the size of the salmon, salt and pepper,, 10 minutes for fish 1/2inch thick,no longer...funish with parsley lemon butter or many other ways according to your preferences. yum!

Please...copper cookware, what to cook?

some people love copper and is is great to cook in with even distribution of heat..not easy to keep shiny and bright..use vinegar and salt for inexpenisve cleaning, rinse and wipe dry.
i think wood utensils are better for the interior if tin and there are plenty of alternatives
in all the big culinary departments.

hi laughingdog, i love my sterling silver lined pans(5)and just started to cook in them last week!Cohrs, a Danish co. made them and Icould not get any information from them after I bought them and did not use them..Too many unanswered questions.I am starting slowly and hope some information comes from your questions and my posts!Coincidental, found an Italian co. that has them, a small pot with shipping $525.00!

hi btnfood,I bought 5 such pans, 30 years ago! Cohr, a danish company made them. I was afraid to use them until last week! Today I saute'ed some salmon gently
and have wished there was more information about cooing in such good utensils.
I was a chef and to compensate for low pay, I indulged in great things at home.

Double Dishwashers? Worth it?

A friend has 3 dishwashers in her newly done fantastic kitchen for a cook..a miele, and a fisher paykel with double drawers. I had a meile in my last house and now have a fisher paykel.There is nothing like the miele.The fisher paykel you have to understqand it and keep in touch with the 800 number where they willingly walk you through the problems...They hate that they might n ot be the best, though maybe adequate. The Miele, Fisher since I do not want to invest in a Miele.
