Pollo doble: freshly roasted chicken shredded and cooked in home-made mole sauce on an earthenware pot in the oven. You then stuff the satuated chicken with the sauce into home-made corn gorditas. Sprinkle some freshly-chopped cilantro and green onions on top witha little queso fresco and...provecho!
My top 5 favorite restaurants:
the restaurant in the Museo de Arte in Tijuana, the outdoor steak taquerias in Hermosillo, Sonora, the outdoor cooking stalls at the market in Oaxaca, and locally...Sol de Mexico and Topolobampo.
